Mike Riddle graciously donated his recipe on a dime after MayFaire.
The mashing schedule starts with the strike with the 24lbs of Pilsner malt. After the 15 minute rest, the aromatic and Munich are added for the 150F rest.
Mike also performed a bit of kettle caramelization on the first runnings during sparging.
Mike's notes indicate a ferment at 68F for 4 weeks and aged for a year before entry. |

Notes: Have some DME ready. Use FERMCAP! Shoot for 80 IBUs.
Version 1) Very Good.
- 2 vials of WLP051
- pitched at 1.0 pitching rate (need 2 vials into 2L starter)
- used 1lb DME to get to 22 brix (adjusted efficiency down on software to read 22). Next time do a double mash (listen to brew strong blichmann #1 show January 2016)
- Primary- 20-30 seconds of oxygen 9 hours after pitch. .5 oz steamed medium toast hungarian oak cubes plus juice... 30 seconds of O2 8-12 hours after pitching. Ferment at 67 raise 1 degree per day starting day 7 up to 72. Airlock activity stopped at day 11, rested for 1.5 days. Read 1.025 FG (9.2% on calculator)
- Secondary on 2 oz steamed medium toast hungarian oak cubes plus juice for 8 days at 65F. Minimal Oak character (although present).
-6 beers left, added another 1 oz in keg for two weeks (in fridge). Entered WoodAged this in (sunshine) and big wood (FCC)
-Score sheets for non wood aged enries (imperial stout) said it needed to bigger with more body. - won bronze at FCC.. Mentioned adding a little more roasted grains so I bumped it from 1.5 to 1.7. This is a really good beer |

Notes: Inspired by the classic bitters from Fuller's, this is ment to be a cross between London Pride and Chiswick bitter, adjusted for homebrewing.
Oxygenate wort to 12 ppm O2.
Pitch 180 billion healthy yeast cells at 17 deg c.
Rise to 20 deg c over night, hold for two days or until SG: 1.025.
Lower temp to 17 deg c over 1 day
Hold at 17 deg c til FG 1.012. Rouse yeast underway if necessary.
Once FG i stabile, coldcrash and rack to keg
Fine with isinglass/gelatine optional
Carbonate to 1 vol Co2
Keep for 2 weeks at 10 deg C
Serve at 12 deg c in a clean pint glass through your beer engine

Notes: Sugar is actually inverted local "raw sugar" from the company that supplies local breweries (a lot like turbinado for those who don't live in Aus.)
This is meant to be in the tradition of old commercial Aussie beers, which were actually originally ales, but the Nottingham imparts less ale characteristics and in fact if you ferment below 18C you are unlikely to find anyone who could pick this from a lager in a blind test
I have also used dry enzyme in my latest versions, hence the attenuation adjusted to 95%.

Notes: Preheat my mash tun with 1.5 gallons of 190 degree water for 30 min. Heated 5 gallon of strike water to 175 degrees. Dumped tun warm up water and add strike water. Add grains. Temperature only dropped to about 165 so added 1 gallon of cold water.
Only dropped to 159 so added some ice. Took almost 15 min to get water to 154 degrees.
Estimate cooler only drops 10 degrees.
