Notes:
Strike with 9 gallons at 160 to hit 147. Raise through Herms to 155 after 45 minutes. Verify Mash PH is 5.2. Adjust if necessary with lactic acid. Sparge with 11 gallons at 165-170
Safeale 04 (wyeast 007) fermented out three generations in. Yeast has a good clean ale flavor. Made a 2 liter starter two days before brew day 1-21-12.
Pitch yeast at 64 and hold for 3-4 days. Add 1vl for 2min of pure 02 prior to pitching. Raise to 70 degrees after a few days to clear diactyle. Yeast should be a dry english ale yeast or california ale yeast strain.
Sorachi Ace is dryhopped near the end of primary fermentation.

Notes: 3 lb DME - Bavarian Wheat Malt Extract from Briess
3 lbs DME - Pilsen Light
1oz. Liberty hops
.5. Saaz hops
6lbs strawberries
40oz rhubarb
1lb cane sugar
Yeast: German Wheat 3333 - High flocculation, 73-77% attenuation, 63-75° ferm temp. Sharp, tart crispness, fruity, sherry-like palate.
Add 3 gallons of water to pot and bring to boil.
Take off of heat and add DME while stirring.
Bring back to boil for 70 min.
Add .5oz Liberty hops (70 min)
Add .5oz Saaz hops (30 min)
Add .5oz Liberty hops (10 min)
Take off of heat, let cool, to 70def F. Add ice cold water to help cool. Transfer to primary and bring volume to 4 gallons. Pitch yeast. Initial Gravity: 1.074
Primary: Two weeks
After two weeks, transfer to secondary. Steep all fruit for one hour, mashing up as fine as possible. Add sugar to mixture. When cooled, add to secondary. Two weeks later, bottle with 3/4 cup priming sugar.
At bottling - murky golden color with a redish hue from the fruit. Nice strawberry flavor that's not over-powering with just a bit of tart from the rhubarb. Deceptively strong, as well! |

Notes: Idea is to get the Coffee flavor from brown malt. Have got good amount of coffee from it in past. Added bit of chocolate malt to just get a hint. I think chocolate does work well with coffee.. Hmm, we'll see.

Initial impression - Chocolate aroma, coffee flavor upfront with hints of chocolate in background. Medium body. Expect this to come out tasty.
Doesn't taste as smooth as hoped for. Treat water with more CaCO3 next time (Maybe it will be smoother post carbonation)

Notes: This was a crazy-tasty beer. Simple and quick for the beginner but a truly delicious beer. I found that my friends and family all loved it from the beer-snobs to the light beer drinkers. A real crowd pleaser!
Basic Guidelines:
Steep the crushed grains in 1.5 gallons of 160°F water for 30 minutes. Remove and sparge into the boil kettle. With the heat off, add all extracts and sugars to the kettle and stir to dissolve completely. Carefully bring to a boil, stirring to avoid scorching and watching for boil-overs. Once a rolling boil has been achieved, add hops according to the schedule and any other additives when listed. After the boil is complete, remove from heat and begin to cool; an ice bath or a wort chiller help to bring the temperature down quickly. When the wort is cool, add it to a clean and sanitized fermentor. Add water until the volume is 5 gallons if necessary. Once the wort has dropped to below 80°F, aerate well (don't forget to take a hydrometer reading) and pitch the yeast. (also consider Wyeast 1056 American Ale, 1450 Denny's Favorite Ale Yeast or Dry Fermentis Safale US 05) ***Add 1 oz Dry Hop Mosaic*** Attach a blow-off tube and ferment at desired temperature for the yeast strain. Rack to a secondary fermentor when krausen has receded and beer begins to clear. After fermentation and conditioning are complete, bottle or keg your beer. Allow to condition again and enjoy!

Notes: Mash at 156°F (69°C) for 60 minutes while constantly recirculating. Target 5.2 pH. Mash out at 168°F (76°C) for 10 minutes, then begin runoff and sparge. Boil for 60 minutes. With 15 minutes left in boil, add lactose and Oreo cookie pieces. Chill to 67°F (19°C), pitch yeast, and oxygenate for 90 seconds at a rate of 2 L/min. with pure O2. Ferment at 67°F (19°C) for 7 days, then raise temp to 70°F (21°C) and hold for 3 days. Cold crash to 33°F (1°C) and hold for 5 days. Force carbonate to 2.5 vol. (5 g/L) CO2.

Notes: this is a porter in the style before the creation of black patent malts. in this style a percentage of the first runnings were drawn off and boiled to a dark caramelized syrup and then added back to the boil to add color and caramel sweetness. so that will be a part of this recipie. after mashing is compleat (before sparge) take 3/4 of a gallon of first runnings and carefuly reduce to a dark syrup without burning. start the boil with the rest of runnings,sparge, hops and licorice. once the syrup is ready add it to the boil in the kettle. side note, for this recipe also you need to steep the hops in 1q of 160•F water before adding, 30 min should be fine. when adding just throw all the hops and liquid into kettle. this is the way it was done in the later 1700s. |
