Ginger is finally finally a decent price. It has been $40 - $60 per kilo!!
I did lots of reading and I don't want this to be too dry and harsh.
Thats why I chose to use a good fermenting American Ale yeast Vs Champagne yeast which is designed to dry it right out.
**Update**
It was still very dry and required some back sweetening with a Ginger Syrup (e.g. Sodastream) at the time of serving.

Notes: Start with RO water. Treat water to hit mash pH of 5.2 - 5.3. Use calcium chloride for added calcium in lieu of gypsum. (Gordon suggests 1 tsp for mash water)
After fermentation is complete raise temp to 60 degrees over several days to finish beer out and provide a diacytel rest. Then transfer to secondary purged of oxygen and lager for 4-6 weeks.
Original recipe called for White Labs WLP940 Mexican Lager yeast.
Starter: 2.5 liter with 8.5z of DME creates 490b cells. |

Notes: Pressure cooked 1oz Hallertau hops in 8 c water in Instant Pot pressure cooker 25 min, then added all to boil kettle. Boiled for around 50 min and S.G. pre-boil was 1047 and post boil was 1.057 Diluted to 1.052 with R.O. water. Pitched yeast that had started earlier. 12.90 Brix @70F adjusted for temp. converts to 1.0522 S.G.
More like 4.5 gallons pre-boil and 4 gal in the fermenter
Added a small portion of yeast slurry/starter today of (S-189, S-23, and Voss Kviek) since there was no activity as Monday at noon.

* i have a bunch of pilsen extract that was planned for pilsner and belgian but i think i want to do AG for those so i will use the pilsen extract here
* swapping out half the citra for mosaic

* adding some wheat to this. considered taking out some of the vienna but i think it will be ok for graininess and color

Start with 13 quarts at 130 deg - should cool to 122 for a 30 min rest
Add 6 quarts boiling water – rest for 15 min
Add 3 quarts boiling water – rest for 15 min
End with 22 quarts at 156 degrees
Add 7 quarts of boiling water for mashout
Put 7 gallons through Mash tun - 28 quarts
These directions are presented by Dornbusch as general/standard Alt directions.
Dough-in at 122°F (50°C) for a 30 minute protein rest. Increase the mash temperature by adding hot water and/or direct heat to 148°F (64°C) for a 15 minute beta saccharification rest. Raise temperature again to 156°F (69°C) for a 15 minute alpha saccharification rest. Mash out by raising the temperature to 170°F (77°C).
Altbier boils are generally 90-120 min. The longer boil time assists in darkening the wort. Subsequently, hop additions will vary depending on length of boil.
Ferment the wort at 60°F (16°C) until it is about 90% attenuated. At the end of primary fermentation, reduce the fermenter temperature by about 2°F (1°C) per day until the temperature gets down to 32-40°F (0-4°C). Let it sit for two weeks to two months (the longer the better). It is recommended to rack the beer off the sediment once or twice with in the first week and purge debris out of the bottom of the fermenter. |
