Notes: If you want to make a damn good german hefeweizen, do 60ish% wheat, 20% munich malt, 10% vienna, and 10% pilsner. Use hallertau/tettanger hops (which ever one you like more) and wlp 300 and ferment around 18 degrees or lower. Your total grain bill will be around 10-11 pounds of grain. I love wlp 300 and I would definately use it. As far as the hops, I would do a FWH as it adds a little complexity to the beer.

Notes: Adjusting an Am wheat recipe from "Nu Home Brew & Bottles" I found on Brewer's Friend - little more hops and going with Sorachi Ace only for the super citrus/lemon influence; targeting 5% ABV and as light as I can get but still have some grain body.
Later...
Too much Sorachi Ace - this hop can be really strong lemon/lemon peel; should have balanced with something like my Semper fIPA. |
