Notes: Crafted this recipe to be a lightly malted, hop-forward and easy drinking IPA with tons of aroma complexity.
OK, I lied. I just dumped a shit-ton of hops into my kettle with the hopes it would be drinkable. Give it a shot with whatever you have in your inventory, What is the worst that could happen? You get BEER. I could live with that, How 'bout you?
Edit* To Follow up: This recipe was my first foray into kegging. On gas at 15 psi for 8 days. Served at 40F on 8 psi and quite possibly the best ale I have ever made! Fresh and delish. |

Carafa II - A German dark de-husked malt for authentic German dark Lagers such as Dunkles and Schwarzbiers. Can also be used and experimented with in other styles where a more mellow roasted grain flavor is desired.
Victory - Gives a warm toasted nutty flavor which is great in Nut Brown Ales. Its clean flavor makes it well suited for ales and lagers alike, use in small amounts to add complexity and warm color.
Crystal, 120L - used in Red Ales and in beers where you want a heavy caramel flavor contribution. Will contribute deep red hues to the color of your beer.
Munich - increases body, aroma, malty sweetness and slight biscuit flavor.
Caramel 80 - Caramel 80 is a medium dark crystal malt with a deep reddish hue and pronounced flavors of dark caramel with hints of raisin. A great caramel malt for many styles (especially red ales), use 3-15% for enhanced body, foam stability, color, and flavor. 80°L
Tasting notes:
Mellow roasted grain flavor, not sharp.
Heavy caramel. Malty sweetness, with slight biscuit profile. Woody on the tongue from low bitterness Northern Brewer hops (German Variety).

Notes: Back 'n' Black, Dark hours, Death/Black Metal Brew Day (Sunday), Black/Dark Sunday
Using Carafa Spec I instead of II, (quite) different batch of Amarillo, replacing Fuggles with Nelson Sauvin, bumping up the flavor/aroma hops...
Mash at 158°F: we got "distracted" and forgot about the mash at ~158-160°F for the first 15 minutes. We then added cold water to lower it to ~155°F.
Splitted batch between brewers
Paco - Pitched dry yeast (US-05) directly unto wort in carboy
Cool to 15°C in ~20min.
1.065
Ferment at 16°C
Lag time less than 12 hours
17/04 - racked to 2nd/keg, ?1.017? am considering dry hoping...
26/04 - 90g Colombus (Tomahanwk) for dry hoping
02/05 - 1.014, kegged: smell and taste awesome... |

Notes: Similar to Cigar's City Jai Alai, this beer is hoppy with enough malt to carry the hops well. Citrusy, but not overpoweringly grapefruit, the firm bitterness balances the beer nicely.
