Single decoction:
Dough in for protein rest x 10 min, then ramp up to 152.
After 30 min at 152, pull 1/3 thick mash (8-10 qt?), heat to boil x 30 min while stirring, then add back to mash kettle. Reset to 170F for mash out x 10 min
FWH while draining basket

Remove boil hop bags at flame out.
Wait 10 min, then add flame out hops in a bag, steep x 20 min then rapidly chill to 60-65F.
Drain wort into FV and then attach to FTC - chill to 48F (HEPA filter in blow off stopper)
Pitch at 48F and allow to free rise to 50F. Ferment at 50F x 7 days, then raise to 55F x 3 days, then raise to 60F x 2 days. Check gravity on day 13 & and 15, and if stable, cold crash and package as per usual. |

How to add Honey to this beer:
Preheat the oven to 176° F. Place the honey in a sanitized, oven-proof saucepan. Heat the honey on the stovetop to 176° F. The honey should be stirred occasionally to avoid burning it. When the honey reaches 176° F, cover the pan and place it in the oven. Use a thermometer, and hold the honey in the oven at 176° F for 2.5 hours. Then bring the honey to room temperature by placing it in an ice bath. (If you can’t hold the honey mixture at precisely 176° F, any temperature from 176–185° F will be fine.)
Now add the honey to sufficient boiled water to match the starting specific gravity of your beer. Honey varies tremendously in most of its characteristics, including specific gravity. As a rough guide, 1 pound of honey dissolved in 1 gallon of water should yield an SG of about 1.032 to 1.038. |

Notes: Brewed 5/25/15. Strike water was 169F and we hit about 152F with that. Recirculated one gallon and hit 151F. Mash pH was 5.1 which is way lower than calculated. Probably could have left out the acid malt. Sparged to 8.5gal on the nose. Kettle runnings were 1.050 which is 83% efficiency. Prolly good I bumped it down to 65% overall. Ending result was about 5.37 in the fermenter when all was said and done. Efficiency was actually higher than I thought it would be which is good. Pitching temp was about 70F which is a bit high so I cooled it down to 67F. 5/26 morning it was still sitting at 67F and I dropped in an ice pack evening time it was sitting at 67F. 5/27 morning it was sitting at 67F and I dropped an ice pack in. By evening it was still sitting at 67F. Dry hopped 6/11 and took a gravity reading. |
