Notes: Mill the grains and mash at 154°F (68°C) for 75 minutes. Recirculate until the runnings are clear, then run off into the kettle. Sparge and top up as needed to get about 6.5 gallons (25 liters) of wort, depending on your evaporation rate.
Boil for 60 minutes, adding hops and finings according to the schedule.
After the boil, chill to about 50°F (10°C), aerate the wort, and pitch the yeast. Ferment at 52°F (11°C) for about 5 days, then raise to 60°F (16°C) for a diacetyl rest. Once fermentation is complete and gravity has stabilized, drop to 54°F (12°C). Gradually lower the temperature to 31°F (-1°C) over 4–5 days. Lager for 3–4 weeks, then package and carbonated to about 2.6 volumes of CO2.

Notes: A pre-Pro lager brewed with a yeast strain reputed to come from Philly's old Christian Schmidt Brewery. This recipe is based on one developed by award-winning homebrewer Jeff Renner and originally published in "Brewing Techniques.
Mash in at 145 0F (63 0C) for 30 minutes. Raise to 158 0F (70 0C) for additional 30 minutes. Mash out at 168 °F (76 0C) if possible. Collect 6.5 gallons (24.6 L) of wort and boil for 60 minutes. Add Cluster or Northern Brewer hops at beginning of boil. Add Hallertau at knockout. Cool wort and transfer to fermenter. Aerate and pitch yeast. Ferment at 52 °F (11 0C) for two weeks, then Lager just above freezing in secondary for six weeks.

Ingredients
9.25 lb. (4.2 kg) Durst continental Pilsner malt (2 °L) or similar
0.5 lb. (227 g) Weyermann Vienna (4 °L)
5 AAU Hallertau pellet hops (1.25 oz./35 g at 4% alpha acids) (60 min.)
White Labs WLP029 (German Ale/Kölsch) or Wyeast 2565 (Kölsch) yeast
Mill the grains and dough-in targeting a mash of around 1.5 quarts of water to 1 pound of grain (a liquor-to-grist ratio of about 3:1 by weight) and a temperature of 149 °F (65 °C). Hold at 149 °F (65 °C) until enzymatic conversion is complete.
Raise the temperature to mash out at 168 °F (76 °C). Sparge slowly with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 6.5 gallons (24.6 L) and the gravity is 1.037 (9.3 °P).
The total wort boil time is 90 minutes, which helps reduce DMS levels in the beer.
Add the bittering hops with 60 minutes remaining in the boil.
Add Irish moss or other kettle finings with 15 minutes left in the boil.
Chill the wort rapidly to 60 °F (16 °C), let the break material settle, rack to the fermenter and aerate thoroughly.
Use 2.5 liquid yeast packages or make a starter with fewer packages.
Ferment at 60 °F (16 °C).
Lager for at least four weeks before bottling or serving.
When finished, carbonate the beer to approximately 2.5 volumes.
Serve at 50 °F (10 °C).

| Notes: First batch turned out great! Nice body and very chocolaty. Gonna increase the roasted barley from 2 oz to 4. And back off the chocolate and C40 by 4 oz to 12 each and see if that is a little less sweet and more balanced. |

consider when remaking this recipe if the malt profile isn't right to do a decoction mash and try using pilsner malt instead with a 90 minute boil

"Traditionally, the mash regimen called a triple decoction required three decoctions and four temperature rests: an acid rest at 95° F, a protein rest at 121° to 131° F, a starch conversion at 150° to 158° F, and a mash-out rest at 165° to 168° F. Today the less time-
consuming double- and single-decoction methods are more common.
The double decoction usually starts with a temperature of 128° to 131° F that is increased to 152° to 155° F and finally 165° to 168° F by two decoctions. The single decoction requires only one decoction to raise the mash temperature either from the starting point, 128° to 131° F, to a mash-out at 152° to 155° F or from 152° to 155° F to mash-out at 165° to 168° F."
