Notes: A recipe created with inspiration from other golden/blonde stouts. At the heart of this lightly colored stout lies an inviting coffee flavor, much like the black hole at the center of a bright quasar.
The cofffee beans are added after primary fermentation is complete. They should be added immediately after home roasting is finished, if possible, and left to float on top of the secondary vessel as whole beans. Leaving as whole beans imparts very little, if any, color. If you try different hops or roasts of coffee and have a good result, please leave a comment to share! |

3 week’s in primary, 3 week’s in the secondary. Appeared to be some fermentation going on the last week of secondary.
2oz bourbon oak in 8oz makers mark added all to secondary. 5oz of coffee in 16 oz water - cold brewed coffee added at bottling. May add half to boil next time and cold brew rest.

Think I have an infection in my bottling bucket. After 3 months in the bottle, FG is 1.012 and highly carbonated. One bomber exploded in the box. |

Ferment at 63 degrees
Split the whirlpool hops; adding half at flameout. The other half once down to 165F.
Dry Hop in Two stages - 4 days each, split the dry hops in half also. Add the first half to primary. Stage one 8/29. Short .5 centennial, switching 1.0, increasing Apollo by .5.
10 day fermentation (63-64F at first, then ramp up to 68-70F once fermenation slows.
8 day, 2 stage dryhop in primary at 68-70F.
Rack to secondary and 4 day cold condition in the secondary at roughly 39F (basically refrigeration).
Force carb and drink 3-4 days later, or bottle and drink 1.5 to 2 weeks after priming.

As you can see, the layout of this calculator looks incredibly similar to the snapshot of the brew sheet.
Here are the results for 6 gallons: (Keep in mind, the Alchemist reportedly uses "Plaster of Paris" instead of Gypsum. Also, homebrewer lactic acid is typically 88% strength vs. the 85% version shown here).

I supplied two different results (in color). Notice the difference when using Calcium Sulfate Anhydrous (Plaster of Paris) vs. Calcium Sulfate Dihydrate (Gypsum) that must be used to hit 750 mg/L.
The information when whittled down, lines up... 6 gallons, approx. 21.6 grams plaster of paris, 1.2, grams calcium chloride, and then adjust mash pH to 5.1-5.3 with lactic acid. |

Notes: Single infusion mash at 154°F (68°C) for 60 minutes. Boil for 90 minutes (or longer if you need to hit gravity). Add the brown sugar in the last 10 minutes of the boil. Ferment at 54°F (12°C).
If you are fermenting with a lager yeast, reduce cooling to the beer to let it to warm up to 60°F (16°C) when the gravity reaches 1.040–1.045. This will allow for full attenuation. |
