Notes: 60 minute boil would be fine, I doubt 90 mins is necessary.
I added 100g of dextrose at the end of the boil to ensure I hit the post boil target OG of 1.036.
Kettle sour method.
1. Mash and boil with NO hops
2. Cool to 35 degrees
3. Add Lacto
4. Wait until desired sourness is reached (check every 12 hours)
5. Add a little bit of sugar to bring it back to expected pre-boil OG
6. Boil again and add hops
7. Cool back down, pitch yeast and ferment as normal with yeast

Dog E is a very special beer. This beer commemorates our 9th year in 2016. This beer originally appeared as AB:04 in 2010, perhaps the most sought after beer we ever brewed. Dog E is a 16.1% Imperial Stout brewed with copious amounts of dark malts, pure cacao and coffee, balanced by the subtle addition of naga chili, and barrel-aged. Perfect for ageing in your cellar, or drinking fresh if you’re lucky enough to get your paws on a bottle. Notes: DIRECTIONS
Use 4.5 gallons (17 L) carbon filtered water, adjust with 4 grams gypsum.
Step mash: 45 minutes at 150°F (66°C), ramp to 170°F (77°C) over 15 minutes (or ramp by infusing 2.5 gallons boiling water), rest 10 minutes at 170°F (77°C).
Vorlauf until clear.
Collect 6.6 gallons (25 L), sparging with 175°F (79°C) water. Boil vigorously for approximately 75 minutes, hopping as in ingredients section.
Whirlpool and allow to settle for 15 minutes. Chill wort to 64°F (18°C). Aerate wort and pitch yeast.
Ferment warm (ale temperature). Dry hop one week into fermentation.
Allow two hearted clone to stay warm with hops for a week.
Rack beer, crash cool, and cold age for a week.

Notes: The OG was 1057 but the FG was 1020. Thus, the ABV is actually 4.86% and not 5.88% as automatically generated above.
I used the "sour beer" technique (i.e. collecting ~300 ml of the wort before adding the hops, leave it covered in film in a cold and dark place for 3 days, collecting ~150ml of that soured wort and boiling it for ~10 minutes, cool it down and add it to the fermenting wort).
I tried this beer and tastes GREAT. It's also a very good base for further experiments and additions, such as coffee, vanilla or chocolate. |
