Notes: Chit Malt is the Dextrin Malt.
The hops in this recipe is just based on what is on hand. The amount of hops per addition should stay around the same (the dry hop could be bigger,) but hops like Columbus and Citra go great with the Belma profile. I like to use Columbus in a major quantity in the dry hop and whirlpool, and Citra in a minor role for any addition from the 20min on. |

Notes: Pulled form Michael Tonsmeire's book "American Sour Beers". Excellent book, must buy.
Book instructs to ferment on yeast slurry from a flemish red. I will be adding this wort to a yeast cake of Roselare 3763 from a Flanders brown that just finished primary.
Variation - Add medium toasted american oak soaked in red wine after primary. Add more oak as needed @ 6 months. Boil oak for 10 min to reduce tannins. I subbed Chinook for Galena since it is a 90 min addition. Still hit 28 ibu.

Notes: Great success can be found with this yeast using the proper pitch rate, pure oxygen, and holding the temperature near 20C for the first 2-3 days. The key to getting full attenuation is adding simple sugar (300g) at this point and raising the temperature about 1C every 12 hours until you get to about 26C, and holding there until FG, which should be < 1.006 in approximately 7-10 days. |
