Notes: Second iteration of my Rye IPA.
I’ve kept the classic hops in the boil but am dry hopping with tropical hops to mix things up a bit.
I've simplified the malt bill and tried to dial down the crystal malt flavour. I've also upped the proportion of rye malt.
I'm interested to see how the Voodoo malt goes, it is apparently "best described as a perfect blend of Amber, Munich, and Medium Crystal". If you can't get it, I would substitute a smaller amount of c60 and put a bit of light Munich in.
I didn't have as much dextrose as I thought on brew day so the OG is lower than the last iteration too
Fun fact: I thought there was something wrong with the US-05 when I saw no activity for about 12 hours so I also pitched some BRY-97 so I'm not sure which yeast I can attribute the success to. |

Let the malt breathe for 1-2 days before mashing. It is best not to store the smoked malt long term.
The finished beer should be fined with gelatine and racked off the kveik sediment.

Book instructs to ferment on yeast slurry from a flemish red. I will be adding this wort to a yeast cake of Roselare 3763 from a Flanders brown that just finished primary.
Variation - Add medium toasted american oak soaked in red wine after primary. Add more oak as needed @ 6 months. Boil oak for 10 min to reduce tannins. I subbed Chinook for Galena since it is a 90 min addition. Still hit 28 ibu.

Notes: 7 gals. wort,60min. boil collected 5.75 gals and chilled with a double immersion set up of #1 in ice,#2 in kettle for 30 min. to 70 degrees
OG was 1.076
FG was 1.022
ABV 7.07%

Primary for 4 weeks only @72degrees, as I used a vial of Clarity Ferm and wanted to see how it turned out with no second ferm.
Xferred to keg and forced @ 27psi 72 degrees for 4 days. It turned out clear and fine, with a good off white head that lasted till the bottom with good lacing.
Good bitterness with no harshness, great citrus hop flavor and aroma with just a hint of pine. Hops and citrus burst out on your taste buds and up through your olfactory senses.
Malt comes through in a good balance but leaves with the swallow, leaving a short lingering mild hop bitterness. You can't wait for another swallow. Not as dry as previous, and I attribute this to the Windsor yeast. |

Notes 12/21/2015- Kegged for 2 weeks now. This beer is growing on me slightly. It was very bland when first kegged but had matured a bit recently. It is a very basic porter and nothing more. Fits style guidelines and all but lacks any umph to make it dynamic. Would play with the adjuncts a bit before brewing again.

Notes: Hoppy Imperial Stout with Christmas twist
Mash at 152F
Add whirlpool hops and pine needles, kill the flame cover and let stand for 45 minutes.
Aroma hops get added at 160F while chilling wort, for 5 min.
Drop the temp Pitch and Ferment at 66F.
Once fermentation slows, add first dry hop (6 day).
Cold Crash to 40F, once ferment complete, for 2 days before racking to secondary. Rack, bring back to room temp, then double dry hop. |
