Notes: Mash at 149 for 90 minutes with a Ph of 5.5 Sparge with 185 water. Collect 7.0 gallons in the kettle and boil for 15 minutes.
Cover and let cool to 115F. Added lactic acid (about 4 ml) to get the Ph to 4.6. Lactobacillus brevis 2 ltr starter, purge with CO2 (from picnic tap of Empty Keg going into headspace, and then wrap whole kettle in plastic wrap. Keep temp between 100 and 115 using therm wrap. Check pH after 24 hours. Target Ph is 3.3-3.8, preferably 3.4
Be prepared to boil and finish the beer after 24, 48, or 72 hours when target pH is reached. Pitch a 2 ltr starter of Brett (or US-05 for a cleaner ferment) |

| Notes: This beer is my first try at a Gose style ale. I will let you know the results. My plan is to sour mash the wort overnight with the acidulated malt sprinkled on top and sealed with plastic wrap and a blanket. then boil it the usual manner adding salt and coriander to the last 15 minutes with the Irish Moss. I am planning to use the Kolsh yeast because it is winter now and my brew area stays a natural 60. I hope also that the Kolsh yeast brings a bit of fruitiness out to counter the sour and the saltiness. |

Notes: 1. Peel and dice pumpkin, squash and sweet potato; drizzle with maple syrup; and roast in oven for 1 hr. at 350F.
2. Start fermentation at 66°F and ramp 2°F per day until 80°F. Let sit for 2-3 weeks then bottle.

| Notes: I toasted 2 pounds of Vienna on 2 large sheets on different racks, one medium one low then switched after 15 minutes, the taste of the toasted grain was noticeable in the first 2 weeks then blended in nicely, I left the roasted barley in the entire mash, it was noticeable as well but blended nicely, I recirculated the entire mash, after fermentation I lagered at 34 for 2 weeks while carbing slow. I can't put this beer down, I'm calling this my Ozarks Red |
