Notes: Testing with S-23, ~20% maize in grain bill and all Perle hop Mash at 152°F Long drain sparge; ~0h45 Cool to ~10-15°C in ~1/2H; missed alarm (15min.), delayed last addition... fussed with colling/whirlpool piping... pfff! S-23 pitched directly; sprinkled on surface; lag time ~24 hours. Ferment at ~13°C +/-1 05/03 - Setting temperature to ~20°C for diacetyl rest... 07/03 - 1.012 16/03 - 1.013 (hydro reading corrected from ~8°C... I think it's done now, ~21/03 - Racked to keg: very clear considering the age

Notes: kettle sour 2 days in, moderately sour/pleasant according to my taste, though Kristi described it as tasting like soap. 9.7 brix @ ~3.8 gallons
still pleasantly sour, souring 4 days in, definitely broken ph meter reports 2.85, preboil brix looks like 9.3 brix @ 3.8 gallons. starting boil @ 4 days.
5 days of fermentation: before adding cherry puree, ~6 brix ~= 1.010 SG. Again pleasantly sour, no longer sweet, though kind of one dimensional.
measured FG after fermentation of puree, hydro read 1.012, refractometer read 6.7. |

| Notes: I toasted 2 pounds of Vienna on 2 large sheets on different racks, one medium one low then switched after 15 minutes, the taste of the toasted grain was noticeable in the first 2 weeks then blended in nicely, I left the roasted barley in the entire mash, it was noticeable as well but blended nicely, I recirculated the entire mash, after fermentation I lagered at 34 for 2 weeks while carbing slow. I can't put this beer down, I'm calling this my Ozarks Red |

Directions
Mash grains at 151-152° F (66-67° C) for an hour or until starch conversion is complete.
Mash out at 170° F (77° C) and sparge. Collect 8 gallons (30 L) of runoff, stir in dextrose,
and bring to a boil. Add hops as indicated in the recipe. After a 90 minute boil, chill wort
to 67° F (19° C) and transfer to fermenter. Pitch two packages of yeast or a yeast starter
and aerate well. Ferment at 67° F (19° C) until fermentation activity subsides, then rack
to secondary. Add first set of dry hops on top of the racked beer and age 7-9 days, then
add the second set. Age five more days then bottle or keg the beer.
Extract Substitution
Substitute 6.5 lb (3.0 kg) of light dry malt extract for two-row malt. Due to the large
hop bill for this recipe, a full wort boil is recommended. Steep grains in 1 gallon (3.8 L)
of water at 165° F (74° C) for 30 minutes, then remove and rinse grains with hot water.
Stir in dextrose and top up kettle to 8 gallons (30 L), and bring to a boil. Add hops as
indicated in the recipe. After a 90 minute boil, chill wort to 67° F (19° C) and transfer to
fermenter. Pitch two packages of yeast or a yeast starter and aerate well. Ferment at 67°
F (19° C) until fermentation activity subsides, then rack to secondary. Add first set of dry
hops on top of the racked beer and age 7-9 days then add the second set. Age five more
days then bottle or keg the beer |
