Notes: Don't be skeered.
Beta gluc rest at 105F for 20-30 min. Sacch rest at 150F for 60 min. Add the 0 min hops, swirl and cover for 30 minutes. Drop the temp quickly, pitch at 68F, raise to 70F at peak of fermentation, and let sit in primary for a total of 14 days. Cold crash for 2 days to 40F, rack to secondary and then bring back to 70F for dry hopping. 3 day dry hop. Bottle and condition for 21 days at 70F. |

Notes: Clone of SweetWater 420 Extra Pale Ale. The ingredient list comes from their website, which says "2 Row, Munich, Wheat, Midnight Wheat", hopped with "Centennial, Cascade", and dry hopped with "Cascade".
It's funny that they describe it as a "West Coast style Extra Pale Ale", because as far as I've seen in the few years I've lived on the West Coast after coming from Atlanta, everything here is MUCH hoppier. I think that's what makes 420 such a favorite: it's hoppy enough to be interesting, but not so hoppy that it repels people who don't like strongly hopped beers. |

| Notes: Used hallertau instead of ultra. could not find ultra. Used imperial organic yeast instead of London 1968. I used 5 lbs of Marris Otter in stead of two row. I used 5 table spoons of PH powder and 1/2 teaspoon of gypsum. I made a two liter starter with two cans of wort and a 200b can of Imperial Organic yeast thats about the same as London 1968. I set the grain mill to .035 and got great efficiency. Did a slow batch sparge. |

Notes: v.2: addition of Carafe produces a great colour, and an almost nutty taste (good).
Poor head retention but happy otherwise! Will do this again.
v.1 the original recipe called for Crystal 120, but this was unavailable, so subbed this is Crystal 80. Colour obviously lighter than desired.
Should have added a fining agent - 3 weeks in the bottle and it's still cloudy, but first bottle was good. I anticipate this will need at least another month to age. |
