DIRECTIONS
Mill the grains and mash at 156°F (69°C) for 45 minutes. Recirculate until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort, depending on your evaporation rate. Boil for 90 minutes, adding hops, yeast nutrient, and finings according to the schedule. After the boil, do a whirlpool step: Stir or recirculate to create a vortex, add the whirlpool hops, and steep 10 minutes. Chill to about 50°F (10°C), aerate the wort, and pitch the yeast. Ferment at 50°F (10°C). When the gravity has dropped below 1.020, raise the temperature to 60°F (16°C). When fermentation is complete and gravity has stabilized, do a forced diacetyl test. Once it passes (usually around Day 14), drop the temperature by 4°F (~2°C) per day—adding dry hops at 40°F (4°C)—until the beer reaches 32°F (0°C). Drop hops or rack, lager for 2 weeks, then package and carbonate to about 2.7 volumes of CO2.
BREWER’S NOTES
Chit malt will ensure you have great head retention—it’s worth it. We use New York City water, which is very soft—like in Plzeň!—and modify it lightly with gypsum and calcium chloride. Feel free to swap out the dry hops to your liking; we prefer a mix of New and Old World hops. In fact, we have other “Crispy” iterations with different dry hops; one called Crispy Morning will be the lineup’s core going forward. |

Another way to get the Jester King house culture into your homebrew would be to primary ferment with a suitable yeast (Wyeast 3711 French Saison or White Labs 565 Belgian Saison work great) and then add the bottle dregs post fermentation. This type of mixed culture fermentation will take much longer for the desired flavor and aroma profile to become present. A Jester King beer will primary ferment for anywhere between 6-10 weeks, generally. Our mixed culture will take most beers all the way to a specific gravity of 1.000, which is what we call “bone dry.” I would not recommend packaging your beer until the gravity has reached a similarly low specific gravity.
At packaging, we add enough dextrose to reach an average CO2 level of 3 volumes. If the beer has sat for a while, we'll add a touch more of the mixed culture to ensure proper refermentation. We allow a bare minimum of 3 weeks for after packaging for our beers to condition and carbonate. The mixed culture will kick up some pretty crazy flavors and aromas in the first week or two, all of which will be absorbed or dissipate with time in the bottle. The most important thing to remember when making this type of beer is patience. |

Notes: I actually doubled the specialty grains and cold steeped them instead of the normal 150° steep. The grains were steeped for about 27 hours, mostly in the fridge in a 1 gallon water jug with about half a gallon of water in it. The grain tea was then strained into the wort with about 15 minutes left on the boil.
This brew spent 3 weeks in the primary fermenter with no secondary.

Mash: heat 4G strike water to 164, targeting 149 degrees. Heated from 142 to 150 late in mash (20 minutes). Final volume after boil 4.8 gallons; took gravity and added .5G, gravity is right on.
No activity after 12 hours; moved upstairs to start (~65 degrees).
