Notes: DIRECTIONS
Mill the grains and mash at 152°F (67°C) for 30 minutes, or until conversion is complete. Recirculate until the runnings are free of particles, then run off into the kettle atop the first-wort hops. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort, depending on your evaporation rate. Boil for 40 minutes. After the boil, do a whirlpool step: Cool the wort to 160–165°F (71–74°C), recirculate or stir to create a vortex, and add the whirlpool hops; steep for 20 minutes. Chill the wort to 67°F (19°C), aerate, and pitch the yeast. Ferment at 67°F (19°C). Once the beer is more than 50 percent attenuated (i.e., below 1.038), raise the temperature to about 70°F (21°C) until fermentation is complete. Once the beer has passed a VDK test (see “Hunting for Diacetyl,” beerandbrewing.com), lower the temperature to 60°F (16°C), optionally harvest the yeast, and add the dry hops. After 3–4 days, crash, package, and carbonate to about 2.4 volumes of CO2.

| Notes: A tropical leaning double IPA showcasing a pretty simple grain bill that rips off Red Wheat from the usual White Wheat of a NEIPA, otherwise showcasing New Zealand hops. Dry hopped with tropical fruit in the secondary. Trying more of the amazing Omega line-up with Saisonstein's monster, a hybrid of Saison and Belgian yeasts which add tart, fruity, bubblegum flavors. Mash should be at 5.35 pH. Ferment first 3 days at 73F, then gradually raise to 78F by day 7 of primary. Should be complete by then, including a few days of rest at terminal gravity. Then it's off to Secondary for 5 - 7 days just to rest at 77F, then 7 days with juicy hops and fruits at ambient, around 73F. Recommend conditioning in keg for two to three weeks to age it a bit and knock off any residuals. A beer in time for June and sipping poolside. |

Notes: A light and easy drinking lager inspired by the small Arkansas village where I was reared. A settlement of German, Swiss, and Polish coal mining immigrants Altus had a population of 418 back in the '80s. Being on the edge of a wet county, next to a dry county and home to 4 wineries and multiple other places to purchase alcoholic beverages. We loved our wine in Altus, but when taking a break from the grape, we chugged a light lager. The use of Talus hops has simply to do with the name; if you transpose the first two letters and you'll know.
