For liquid yeast use an Irish Ale Yeast.
For dry use Nottingham English Ale, S05 or S04.
The IBU is high on this one but the cyrstal malt, oats, and wheat balance it out..
7 gals strike water at 162F for a 155F Mash x60mins
Keep the roasted grains out for top mashing
Add rice hulls to starting mash
Add roasted grain after 60 mins and steap while mashing out to 170F for at least 20 mins. Pull grain at 170F and drain while raising word to boiling.
Boil for 1 hour
add 60 min addition
add 15 min additions
add 10 min Whirfloc
Cool to pitching temp.
Ferment 3 weeks.
add dry hops for 1 week.

Notes: I added 1 (one) lbs of frozen blueberries into the secondary, 5 gallon glass carboy. I suspended the blueberries in muslin bag. I put bag into carboy and added the blueberries a few at a time. yes tedious. I held the bag in place by draping it over the opening and placing rubber stopper in carboy.
however when I put blueberries into carboy fermentation started again. I was a little concerned but I relaxed, had a home brew, practiced good hygiene, and carried on.
after I week transferred to a keg for final conditioning. so far it tastes great,slight blueberry taste and not overwhelming and it did not turn sour which was my concern.
the frozen blueberries were my choice because they are 'flashed pasteurized" when frozen. I was a pain to get blueberries out. if friends like the beer next time ill brew a full 10 gallons and add blueberries to brite tank. |

laked oats in the mash lend a silky texture that is otherwise difficult to achieve, while malted wheat and barley supply the bulk of the fermentable sugars. Four late-kettle additions of Nelson Sauvin hops deliver the classic gooseberry and white wine notes for which that cultivar is known.

A really full flavoured brown ale, definitely nutty, complex flavour, fruity, with finish of vine fruits. Small white head as bottle primed with only 1/4 tsp to give cask like condition.
Very, very easy drinking and very popular with taster friends.
Aurora and Brambling make a good combination. |

Cooled to 100° in sink with ice and water, and transferred to fermentation vessel. Airated by stirring. Put vessel in a picnic cooler with ice and water, and let sit in garage overnight. pitch yeast the next morning at 58° (yeast harvested from previous batch, cleaned, and grown through a 2 stage started, one liter wort per stage, over two days. Then put in fridge overnight to floculate and force hibernation)
