Notes: Soak honey bottles in hot water for easy pour.
Add 3 Gal room temp Water w/ 1 dose Yeast Nutrient blend to fermenter
Add Honey to fermenter.
Boil 0.5 Gal water and add to honey containers to dissolve remaining honey, shake, and pour into fermenter .
Top up with additional water to make 5 Gal.
Stir must until all honey is dissolved 5-15 minutes
Add yeast slurry to must.
Add 1 dose Yeast Nutrient at 24 / 48 / 72 hours after pitch and stir.
(nutrient blend is 1/8 oz yeast nutrient and 1/10 oz energizer per dose)
After secondary fermentation, should be able to bottle in 3.5 months after brewing day. |

| Notes: Add grain to 14 gallons water at 164°F for a target mash of 154°F. Hold mash temp for 90 minutes. Recirculate mash until wort is free from large amounts of grain. Drain off wort into boil kettle for approximately 11 gallons (sparge as needed for a boil gravity of 1.075). Boil for 240 minutes, adding hops at 60 minutes (IMPORTANT: please be aware of your boil-off rate, as you should finish your boil with 5.5 gallons and aim to get 5 gallons into your fermenter). brix was ~21 @ 28C on 8/5 @ ~6pm
dry hop 1 at 4pm on 8/13
dry hop 2 at 1pm on 8/16
brix was ~4 @ 24C on 8/19. |

Mix 2 lbs of the extract with 2 gallons of boiling water (off the heat).
Boil for 60 minutes adding the hops as indicated.
Add the remaining 3 lbs of extract with 10 minutes remaining in the boil (again off the heat)
Transfer to the fermenter.
Top up with enough cold water to reach 5 gallons.
Ferment between 65-69F for 1 week before bottling or kegging. |
