Notes: Added hops directly to kettle. Post boil hops added at 190, allowed to steep for 20 minutes, then the wort was cooled. The hops stayed in the kettle during cooling. After cooling, the hops were placed in a colander and the liquid was squeezed out of them.
The dry hops were added directly to the fermenter. After packaging, these hops were not squeezed. The estimated liquid loss due to the use of whole cone hops was 3/4 gallon.
Fermentation temps were held at 68 degrees. |

I took out 2kg of pilsen malt to use in another brew, and to increase the ratio of other grains, and dropped batch size from 20L to 12L.
I also added some hops I had in fridge, and changed hop schedule, as outlined in this recipe. |

Notes: Perfect for summer or for the fruit beer lover. A light refreshing fruit/wheat beer recipe.
6.6 lbs Coopers Wheat Malt Extract
1 lb 10L Crystal malt
1 lb Clover Honey
1/4 lb Flaked Wheat
1 1/2 oz Styrian Golding Hops (15 min)
1 oz Liberty Hops (5 min)
3 oz Raspberry Extract
1 vial White Labs WLP001 California Ale Yeast
1 cup Cooper Light Dry Malt Extract (priming)
Steep Crystal malt 15-20 minutes at 150-180F, then remove. Mix in flaked wheat and malt extract, bring to boil. Add Styrian Goldings. Boil 15 minutes. Add Liberty hops and honey with 5 minutes remaining in boil. Cool to fermentation temperature, transfer to fermenter, straining out the flaked wheat and hops and add yeast. At bottling time, transfer to bottling vessel, thoroughly mixing in DME and raspberry extract. Condition 2-4 weeks. |

| Notes: Inspired by Hoyne's Helios Dortmunder Golden Lager, I asked Sean Hoyne for some grain bill, hop and yeast ideas for reproducing this. Although he gave me a list of ingredients, the measurements were sorely lacking so I've pretty much created to my liking. Notes: Heat 2-3 gallons of water to 160 degrees. Turn ogg heat and (using a muslin or nylon bag) steep the grains for 10 minutes, then remove the grains and bring the liquid to a boil. Turn off heat andd stir in the malt extract until completely disolved. Return to a boil, then add the Hallertau hops. Boil for 55 minutes, add the Liberty hops, boil 5 minutes more, then cool to 80 degrees or less and top up with water to just over 5 gallons before pitching the yeast. Aerate well and ferment at 72-78 degrees F.

using amarillo and ekg instead of opening a new saaz pack.
what temp to ferment at? care most about yeast propagation but also want it to be drinkable....i have 11 days so if i ferment lower it might be done in time. but also where would i do this, is the garage appropriate temperature? |
