Notes: this recipe is an attempt to re-create an 1870's English dinner ale
cooling the fermenter with frozen water bottles
at 4pm, with six bottles in, beer temp was 70 degrees
I added some fresh bottles and switched out two
ideal range for this yeast is 59-68 degrees
for the first five or six days, held the liquid temp to between 62 and 66 degrees. then let it rise to around 68 degrees to finish.

A good starting point for any wheat IPA recipe would be either 50% barley malt and 50% wheat malt, or 50% barley malt, 45% wheat malt and 5% raw wheat.
Do not use, or at least minimize the use of, crystal malts. Very small amounts of biscuit-type malts (including Briess Victory) or melanoidin/aromatic malts could be added to alter the flavor slightly.
Your barley malt could be any 2-row pale malt, perhaps with a small percentage (less than 10%) of Vienna malt or Munich malt thrown in. In my opinion, this type of beer doesn’t benefit from an overly-complex grain bill.
If you use raw wheat, you’ll need to perform a cereal mash. In other words, you need to boil the wheat, along with about 5% malt, for at least 15 minutes and then stir this mixture into the main mash. Mix the raw wheat and malt with water to a thin mash consistency. In American wheat beers that use raw wheat, the percentage of raw wheat is usually around 5–10%

Next time, I'd drop the chocolate malt down or go for pale chocolate. Wasn't an overpowering taste, but certainly could be dropped. Good session beer. |

Notes: Ale Yeast
Wyeast and White Labs both offer an Irish ale yeast — 1084 and WLP004, repectively — and these are popular choices for dry stouts. However, many English ale strains will do a good job in a dry stout, especially if they are relatively highly attenuative. Likewise, a “neutral” American strain — including the very popular strain available as Wyeast 1056, White Labs WLP001 or Safale US-05 — is also a good choice. If the yeast has enough character on its own to distract from the roast character, then it’s not appropriate.
Keep in mind that, although dry stouts are meant to be dry, they don’t have to be bone dry. You do not need to shy away from your favorite English ale yeast if it is only moderately attenuative. Dry stouts start at fairly low original gravities (OGs), so you can reach an appropriately low final gravity, even if your yeast strain is not among the highest attenuators. |
