Notes: Times are tough in Pottersville, with the rent that old man Potter charges for his slums! Given that he owns the mill too, his prices are out of control...so what's a brewer to do?
This twist on a pale ale uses light molasses and dark molasses instead of grains. It is gluten free, if made with gluten free yeasts like Danstar.
Rather than corn syrup, light molasses or Lyle's Golden syrup can be used. The molasses in the recipe should be dark molasses, to provide color and character, and some complexity.
Boil 1 gallon of water, and add hops according to schedule.
Add 2oz molasses at flameout.
Pour the 1.25lb corn syrup (or light molasses/golden syrup, whatever you decided to use) into a new pot.
Strain hot hops/molasses water into new pot, on top of corn syrup (or light molasses/golden syrup).
Cool to 70-80 degrees.
Rack into primary until the wort just reaches the shoulder of the jug. Just be sure you do not surpass the ONE GALLON writing on the jug. I recommend a blow off tube for the first 3-4 days of fermentation, as well.
Pitch yeast and give it 2 weeks, or until fermentation stops and hydrometer readings are consistent.
Bottle with 0.9-1.0 oz of dextrose.

Clear wort boil-down notes (Optional Step):

(Optionally) perform a separate boil-down of 1.00 gallon of vorlaufed wort into a syrup using the following steps:
1. Extract 1.0 gallon of wort at the beginning of clear runoff into a 3-5 gallon pot.
2. Boil the wort down until it becomes a dark mahogany brown and is bubbling with large bubbles.
3. Be careful NOT to burn the maltose syrup.
4. The result will be approximately 24-26 ounces of syrup.
5. Re-crash the syrup by adding wort from the ongoing main boil.
6. Pour the dissolved liquid back in to the main boil.
Fermentation Pitch Notes:

Chill wort to 63-64F
Oxygenate chilled wort to 8-10PPM by diffusing pure O2 via .05 micron diffuser for 90-120 seconds.
Pitch decanted yeast starter, adding chilled wort to the yeast flask to clear remaining yeast as necessary.
Ramp fermentation temp (evenly over time) from 63 - 80F over 7 days.

Notes: Using a packet of Safale-05 and a packet Danstar Windsor yeast.
Aerated for 35 minute with air pump and 5 micron stone. Pitched both yeast starters into wort. After 4 days the fermentation stopped so did a starter with Mangrove Jack Belgian Ale yeast (1/2 packet) in 1.3 liter starter and pitched into the beer to help finish. At this point I also added the 1.3 pounds of maple syrup. After 4 more days of fermentation the beer finished at 1.022. The final ABV is 12.7%. |

Notes: This has a bit of "grainy" flavor. Oddly enough, given the grains profile, I think it maybe coming from the hops, or some mistake during brewing.
Still it's a good stout and is smooth (perhaps too smooth ie., a high mash temp)
