Sprinkle the yeast in minimum 10 times its weight of sterile water or wort at 23°C ± 3°C (73°F ± 6°F). Leave to rest 15 to 30 minutes.
Gently stir for 30 minutes, and pitch the resultant cream into the fermentation vessel.
Alternatively, pitch the yeast directly in the fermentation vessel providing the temperature of the wort is above 20°C (68°F). Progressively sprinkle
the dry yeast into the wort ensuring the yeast covers all the surface of wort available in order to avoid clumps. Leave for 30 minutes, then mix the
wort using aeration or by wort addition |

Notes: - based on "Westbound Quad" recipe on the HBA website/zymurgy magazine. That called for 1.1kg dark candi sugar @ 180L. I'll use 180 if I can find it, otherwise I'll mix/match dark and light to try and hit about 20 SRM.

update 2019-10-17: first attempt at this ended up looking like a tripel because the candi sugar was not as dark as advertised (60°L rather than 275). Fixed by making a reduction of Special B and Chocolate malt (recipe updated).

Notes: Cool and pitch liquid german lager yeast and ferment at 50F for about 7-10 days then raise temp to around 65 for a few days to cleanup and then bottle one jug and transfer the other jug to a new sanitized jug for lagering for about a month and check the difference between the two. |

1 week at 52 degrees. To keg after another week, FG 1.012. Very clear,amber, good body.
Only collected 2.5 gallons.(Lots of trub from the BIAB method after boil. Will let it settle more next time before pitching the
yeast. ABV 6.7%
