Notes: All grains and pumpkin go in the mash. If the pumpkin is in the boil you will most likely lose a gallon of water, and have a tough time straining the pumpkin out.
If you really want to put the pumpkin into the boil then you should use a grain bag or filter the wort before racking to your primary.
The pumpkin should be cleaned and cut into small cubes and baked for 45 mins at 350, then mashed and coated with honey. Then baked for another 45 mins at 350. Let it cool to 154 and add to mash. ( I used can un spiced pumpkin in all steps )
Secondary - 10-3-14 added 2 oz vanilla extract, 1 cinnamon stick, 16oz pumpkin flesh, 1/2 teaspoon graham cracker extract and 1/2 tsp pumpkin pie spice. Will sample in a week.
Btw- tasted really good
For the vanilla bean vodka solution, two vanilla beans are cut in half. The seeds and goodies are then scraped into 4oz of vodka. Let the vodka sit for two weeks.
Notes from Hans: Instead of using canned pumpkin, I cut an actual pumpkin up in cubes and cover it with cinnamon and honey and then smoke it in the Traeger. There's two pumpkin additions, and I do this each time. This is one of my favorite beers, and I would drink it year round if it was on tap. If you want to make this BEFORE pumpkins are being harvested, you can use sweet potatoes. I've tried it, 99% of the flavor comes from the spices and such, and the texture of sweet potatoes (or yams are even better since they are orange in color) are very similar. They contribute the same sugars from what I can tell.
Oh, also.. you can use turbinado (sugar in the raw) or brown sugar. A mix of each is suggested, but if you don't have one or the other it's a very small difference at the end. Just use 1 pound of brown sugar or 1 pound of turbinado. It's going to be a great beer either way. |

Supposedly, Double Jack is at least the same grain bill but with a higher gravity.
They also suggested Cara Stan as a substitute for Cara Malt.
The hop schedule is taken/adapted from: http://www.bertusbrewery.com/2012/11/ipa-clone-series-firestone-walker.html I actually made this recipe but found that I likely messed up by switching the yeast to US-04. It wasn't good, but the guy who provided that recipe was so thrilled with his result, I thought it was worth keeping.
My biggest complaint having made that beer was that the malt flavor wasn't right (not sweet enough) and that the aroma had a lot of yeast quality I wasn't expecting. Both can be corrected by just using WLP002. But I do like the idea of tweaking the malt bill a bit as well. |
