Notes: this is a porter in the style before the creation of black patent malts. in this style a percentage of the first runnings were drawn off and boiled to a dark caramelized syrup and then added back to the boil to add color and caramel sweetness. so that will be a part of this recipie. after mashing is compleat (before sparge) take 3/4 of a gallon of first runnings and carefuly reduce to a dark syrup without burning. start the boil with the rest of runnings,sparge, hops and licorice. once the syrup is ready add it to the boil in the kettle.
side note, for this recipe also you need to steep the hops in 1q of 160•F water before adding, 30 min should be fine. when adding just throw all the hops and liquid into kettle. this is the way it was done in the later 1700s. |

| Notes: Was going for a ruination clone but on short notice I could only find 150L crystal and missed my color, my wyeast failed and had to sub coopers dry, and had to sub some horizon in the dry hopping..smells and tastes on track will see in about 3 weeks after bottling. |

Notes: The idea behind this recipe is to make a concentrated beer, then divide the results of the beer into 2 separate 5 gallon pails and top up with approx 2.5-3 Gallons of water each and then ferment.
It is possible to add 2 different yeasts, 1 per batch.
Results will roughly equal 2 4.5% beers.
Also when chilling bring down to only 85-87 Degrees F as when you add cold water it drops the temps. Updated mar 23 2016

Sample taken 9/12/14 - gravity 1.022: Dry, slightly tart, pineapple and passionfruit. Probably Brett. Brown rafts atop of a bubbly pellicle.
04/01/15 - Gravity at 1.010 PH at 4.0 Smell of brett, sewer, dirty pipes etc with some barnyard coming through. Brown rafts floating on top of the surface - no bubbly pellicle as before. |
