Notes: Based on Thomas coopers the innkeepers daughter. Trying for a bit more body in the beer than I got with the base tin and 1.5 kg of DME. (Use the coopers sparkling tin).
1.5KG DME. Using 1kg of ultra boost to get numbers back up. Maltodextrin should help mouthful compared to prior recipe.
Prob use harvested yeast this time. Ferment at 18c or19c I think this time too.
Hops is already in tin of coopers.
Use the dry coopers yeast this time as doing a quick brew. |

Notes: 7/22/2021: Added 5ml lactic acid before souring to lower ph 5.2 -> 4.4ish, looking for <3.3ph
20 hours incubation @ 40C: 3.65, 40 hours: 3.43, will add 1.5ml acid at kegging
Presour grav: 1.037, OG: 1.053...refractometers don't work with soured wort maybe?
Fermentation completed in a few days, added 1kg blueberries after 1 week, let sit for a week
Kegged 8/8/21 - Good level of sour, nice dark flavor notes. Hint of blueberry comes through. All in all, a resounding success :)

use toob for dry hops in order to keep the slurry pure
put dry hops in at 1 week - significant krausen remained
Beer came out super duper clear!
1) put dry hops in fermenter
2) cold crash for 3 days
3) transfer cold beer to keg and immediately add gelatin
4) leave on high pressure for 3 days

Notes: Will attempt a simple multi step mash with a ferulic acid rest at 44C for 20 minutes at 1.5 l/kg, later adding 5.9l at boiling to get a mash temperature of 64c for another hour or until conversion is complete.

Notes: Batch #1: Hit 1.049. Was half gallon short after boil so added water along with 3/4 cup of corn sugar. On mash added 1 and and a half quarts to account for dead space in mash tun. Not sure if it helped but was right on OG target. Also, initial temp was 158 but it evened out to 154 by end of mash. Not sure on color at this point. Might increase the pale 2-row by a pound to 9.5 next time. Added .25 oz citra pellets for last two days of second ferment |
