Notes: Grain Bill oats- just use old fashioned Quaker oats
Mash Temp- Its better to mash on the higher side and try to get a "sweeter" or less ferment-able beer usually 154-158.
Mash pH of 5.0-5.4. Correct acidity with lactic acid 88%. Measure after mash in.
Water profile- Maintain a 1:1 chloride to sulfate ratio at a level of 150 ppm. These are the only two water variables that should be monitored.
Dry hop in 2 steps. 1.) add 30% of dry hops at day 2-3 of active fermentation or after high krasen. 2.) add second dry hop once fermentation has completed let sit for 3-5 days before transferring. Another option is to transfer once fermentation has completed and just dry hop in the keg with a 5 g paint strainer bag.
Packaging- After 1st dry hopping do not let beer interact with oxygen. This will result in oxidation and a ruined product. Perform a closed transfer to a keg that is scrubbed of oxygen/air. You can do this by filling a keg with starsan and push it out with CO2. This will leave you with a keg full of CO2. Once complete pop the keg open and add dry hops in a bag. CO2 should stay in the keg during this addition as it is heavier than air. Hook up racking cane to out post of keg . Then hook up CO2 to fermentor and push beer into keg. DO NOT BOTTLE once dry hopped. |

Makes a great 'cheating' baltic porter with ale yeast, so no need to use lager yeast and temps
Needs to be matured for a few months. I normally leave it form 3 months and you can really notice the difference
Also takes extra flavors well. A bottling time I sometimes add 50ml of a good vanilla essence |

Notes: Bring 7 gallons of distilled water to 158F, then add BIAB bag.
Mash in grains, hold at 150F for 1 hour. pH = 5.4 @ 75F after 15 mins.
After 1 hour, increase to 168F over 20 mins, then lift bag and let drain.
Transfer bag to food-grade bucket and pour 1.5 gal of room temp distilled water over grains and allow to soak for 10 mins. Stir a bit, then lift bag and squeeze.
Add runoff from rinsed grains to kettle. Should now be 8 gal.
Bring to boil and add hops as indicated.
Add corn sugar and yeast nutrient with about 30 mins left in boil.
After boil end, add whirlpool hops when temps are 170F and circulate for 20-30 mins.
Cool to to 65F, then stop whirlpool, let settle for at least 30 mins.
Transfer to fermenter (approx. 5.5 gallons). Pitch yeast.
Ferment 2-3 days at 65F then allow to reach 68F over the rest of the fermentation period.
After 10 days, add dry hops.
Three to four days later (13-14 days in fermenter), cold crash for 1-2 days then rack to keg. |
