For yeast, use full package of safale S05, or half in a .5L starter made 1 day prior. This half packet has worked very well previously for a lager.
Distilled water for sparge
London Ont filtered water for mash.
Mash PH came in at 6.0. Added .5 ml lactic but made no difference. Suspect high RA in London water.
73C strike water with 20C grain temp hit target of 67C bang on.
Rehydrate tmp is low, 75F to 84F |

Notes: I'll use lots of ~ and round to the nearest 1/2 qt - that's close enough for me. I'll also ignore MLT dead space and cooling losses, but these could add another 1-2 qts to your sparge water needed.

Your final volume will be ~ 85% of your volume into the boiler.
Your volume into the boiler will be your strike water - 0.12 gal/lb of grain + sparge water.
You strike with 1.25 qts/lb = 12.5 qts. You lose ~ 1.2 gal to grain absorbtion. You've got ~ 7.5 qts left.
Suppose you want 5.5 gals into the fermenter. Then you need to have 6.5 gals (26 qts) into the boil kettle, because you'll lose ~ 1 gal in evaporation.
Now you're ready to figure your sparge water.
Sparge water = volume into kettle - volume out of mash = 26 qts - 7.5 qts = 18.5 qts =~ 4.5 gals |

First samples and this came out outstanding nice head that does not fade. Chinook hops gives it nice bitterness and cascade is just perfect. This is a Must Brew again!
2/13/15 This Brew is just great the German Pilsner grain gives the head thickness and malty flavor that is perfect.
The IBU's are probably more around 45. Which I like less |

In prymarny for 2.5 weeks.
Bitterness should be higher to my liking. Subtle aroma but quite evident.
Beautiful dark amber, clear. Chill haze though.
Malty, clean flavour. No discernable esters. A bit phenolic although fading with time. Water feels softer than anticipated which makes drinking this beer easier (not cloying as I feared).
Carbonatin on the low side but appropriate. White head which doesn't persist for long.
