Notes: 1) Sanitize brewing equipment.
2) Heat water to 150-160 max.
3) Steep grains for 20 min.
4) Bring wort to a boil (212) then remove from heat, add 6.6lb LME
and stir in until dissolved then return to boil.
5) Add 1.25 oz. Cascade/Saaz bittering hops at start of 50 min boil.
6) Add 1 oz. Liberty hops at 20 min of boil.
7) Add 1 oz. of Saaz hops at 5min of boil with .25 oz. of sweet orange peel, 2oz of honey.
8) Transfer wort into primary fermenter and bring level to 5 gal.
9) Take hydrometer reading and record.
10) Aerate the wort then pitch the yeast once temp is <78 deg.
11) Ferment 1 week or until completed. Transfer wort to secondary and add 1.5 oz. Blood orange concentrate, and .2oz Cascade dry hop. Ferment for 1 week.

Notes: Couple of Quick Notes:
I toasted my own Buckwheat in a dry pan. Basically i put it in a dry pan on medium heat and keep stirring until it is the right color.
Also, the Molasses i used was mostly dark molasses with a small amount of Blackstrap molasses. this gave it a bitter flavor and helps with the color. i used it in 3 parts dark molasses to 1 part blackstrap.
In the secondary i put in 3oz ground coffee and 1 oz vanilla beans
Finally, i put it on CO2 for 48 hours then finished it with a Nitrogen system. |

Notes: Initial wort was made with only 2 lbs DME to keep gravity below 1.04. Brought wort to first boil and added 2 lbs of DME. Once dissolve, cooled wort to 110F and pitches to GoodBelly PlusShots (Mango) to kettle sour. Left pot with wort wrapped in blankets (to keep warm) for 72 hours.
Then, brought wort back to boil, added remaining DME, Sugar, and did the hop schedule. |

| Notes: Coriander and Orange Peal added for last 10 minutes of boil. Messed up temp at mash and went way high - contributed to higher OG - but it didn't matter. Racked into a keg and set at 30 psi for two days then dropped to 12 psi and served after more days. This was an AMAZING beer. Was gone at a small party in less than 90 minutes. Just refreshing, crisp with some good banana and clove. |

Tastes pretty good, but not perfect. Kind of a mix between a belgian and a farmhouse, rather than the light/fruity/hoppy farmhouse I was targeting. Next time will not make it as malty, and will use a bit more dry hop. |

This is a very sweet Sour even with the water addition,it also has a syrup taste due to the grad.sugar (change the sugar)
The original Recipe is from the 20's and reads like this
2lbs Dried Apricots (Used Dried turkish)
1/2 C. Cornmeal (Used 16 oz,2c.)
5lbs Granulated Sugar
1 1/2 gal water (used 4gal)
2 Yeast Cakes (See Above, Try the
yeast cakes for fun)
1tsp Ginger (Used 2 Tbls Ginger)
Mix well and let stand for ten days without stirring.
Strain through cheese cloth twice.
Take 1/2c. sugar and burn it, add it to give color.
Let stand a day and strain, then bottle.
