Notes: Add Lactose and Brew Tan B with ~5 min boil left.
Whirlpool at 170F.
Puree pineapple chunks, strain and heat at ~170 F for 5-10 min prior to adding to fermenter. This will denature the papain enzyme that can digest proteins and ruin head retention. (Thanks Isomerization!)
Add pineapple 48 hrs after yeast pitch (5 days).
Add vanilla and dry hops 72 hrs after yeast pitch (4 days).
Cold-crash??
OG = 1.062 at 96F (1.066 corrected; 1.067 adjusted)

Notes: Mash at 156 for 60 minutes. Ferment at 65 and slowly raise to 70 towards the end.
Notes: 17.35 pushed my Clawhammer to the max. This caused poor efficiency and grain getting into the mash. Should have used a bit less water as I had too much even after a 90 minute boil. Double check the grain absorption rate for my equipment. Only had 1 oz of chocolate malt so I made up for it with black malt.
Next time use less grain and more DME to get higher SG. |

Mäskning/Lakning i 30l kokkärl med cirkulation, utsug-pump-kokkärl, lauterhelix plus mäskpåse med grova hål i botten och finare på sidor. Fungerade riktigt bra!
Mäsk en timma. Lakning med utsug till jäshink. Landade på 26-27 liter.
Kokning i 45 minuter, glömde protafloc.
Tappning direkt efter kok till hopstand (30 liter kastrull med lauterhelix och 150g humle. Fick ligga i 10 minuter. Pump till värmeväxlare och till betterbottle. 18-19 liter. Vörten var ganska varm. Kanske pumpen körde för fort genot växlaren.
OG: 1.070
FG: 1017
Förslag på förbättringar : viktigast är att få i mer bitterhet . 10 min hopstand utan bitterhumle verkar vara på tok för lite . Även för lite humle arom, behöver nog torrhumlas under högre temp ( inte kombinera med kall-krash). Även jäsning under högre tempratur skulle nog gynna denna öl. |
