Notes: Bring 7 gallons of distilled water to 158F, then add BIAB bag.
Mash in grains, hold at 150F for 1 hour. pH = 5.4 @ 75F after 15 mins.
After 1 hour, increase to 168F over 20 mins, then lift bag and let drain.
Transfer bag to food-grade bucket and pour 1.5 gal of room temp distilled water over grains and allow to soak for 10 mins. Stir a bit, then lift bag and squeeze.
Add runoff from rinsed grains to kettle. Should now be 8 gal.
Bring to boil and add hops as indicated.
Add corn sugar and yeast nutrient with about 30 mins left in boil.
After boil end, add whirlpool hops when temps are 170F and circulate for 20-30 mins.
Cool to to 65F, then stop whirlpool, let settle for at least 30 mins.
Transfer to fermenter (approx. 5.5 gallons). Pitch yeast.
Ferment 2-3 days at 65F then allow to reach 68F over the rest of the fermentation period.
After 10 days, add dry hops.
Three to four days later (13-14 days in fermenter), cold crash for 1-2 days then rack to keg. |

Mash in at a higher temperature to leave more unfermentable sugars in the wort. This gives the beer a sweeter porter profile.
Astringency
Beers containing more dark grains are more likely to have some astringency in them. This is because darkly-roasted malts give up their tannins a bit easier in the mash. In a dark beer like a porter, adding less dark malt really isn’t an option. So, it pays to keep two things in mind. First, if you don’t oversparge, you probably won’t get an excessive amount of astringency, even in the darkest porter. Monitor your final runnings and don’t let them drop below SG 1.010 (or rise above a pH of 5.8, if you have a pH meter). Also, you can cool down and taste little samples of your runnings as you direct them to your kettle. Once the runnings start to have a puckering, drying sensation to them, stop collecting wort.
Mashing and Steeping
For all-grain brewers, a single infusion mash is all that is required for a porter. For a “rounder,” full-bodied brew, mash between 152 °F (67 °C) and 156 °F (69 °C). Mash out to 168 °F (76 °C) when the mash is done to (mostly) stop enzymatic activity. In addition, there’s absolutely no reason to extend your mash beyond the point in which an iodine test shows that all the starches are converted. |

Notes: Brewed 12/05/2015.
Intended to bottle on 1/16/2016. The beer finished just above 1.020, but tastes very sweet. It's undrinkable like this; I can choke one down if I mix with something else. I racked it to a smaller carboy and added some amylase enzyme because I've been told that can restart a stuck fermentation, but I'm doubtful.
It did start fermenting again after adding the amylase. BTW, I think my LHBS ordered coffee malt for me instead of brown malt. That would explain why this beer is inky black.
1/20/2017: I just drank the last bottle of this. After aging for about a year it was really good, just served it a little colder than normal for this style to mask the sweetness (which has subsided.) I'm sad it's gone, and I will brew it again soon (using real brown malt next time, and fermenting a little warmer which T-58 likes so it attenuates better |
