*Note on the Original Gravity: 1.059 (14.5° P) with kettle addition of sugar, 1.066 (16.25° P) with primary addition of sugar, 1.070 (17° P) with priming sugar. Using reverse osmosis water treated with 1 gram calcium sulfate per gallon (0.26 g/liter), mash grains at 147° F (64° C) for 60 minutes. Raise to 151° F (66° C) and hold another 30 minutes. Mash out at 168° F (76° C) for 10 minutes. Collect wort and boil for 60 minutes, adding 1 lb. dextrose to kettle for 15 minutes before knockout. Chill to 64° F (18° C) and oxygenate wort. Pitch active yeast starter. A day after high kräusen is reached (usually 3 to 4 days from pitching) add 12 oz (340 g) dextrose to just enough water to dissolve. Boil the solution 10 minutes, cool briefly and add it directly to primary. Allow primary temperature to rise from 64° F to 78°F (26° C), applying heat if necessary. When final gravity is reached, usually after about 8 days, add (or rack onto) gelatin fining solution and crash to 32° F (0° C). Hold at this temperature for 21 days. Rack clear beer and blend thoroughly with a solution of 8 oz (227 g) dextrose and a dose of fresh yeast (an active starter of the Belgian Golden strain, or properly rehydrated Champagne dry yeast). Bottle in sturdy brown bottles. Keep bottles at 75° F (24° C) for two weeks to allow for carbonation. Chill a bottle and verify carbonation has reached around 4 volumes. If this is the case, cold-store remaining bottles for six weeks at 40° F (4° C) to allow beer to smooth out and mellow.

Notes: On the day I got grains from Windsor, my preferred yeast (WLP500) was not available, so another “Switch” was made. I chose WLP550 Belgian Ale Yeast.
A fellow home brewer suggested using some Special B malt in place of some of the Crystal 80 to bring out some raisiny character. This version drops Crystal 80 to 4 ounces (from 6), while adding in 2 ounces of Special B.
Another alteration is the hops. Added a couple grams of Warrior to Celeia for 60 minute bittering, and subbed Hersbrucker at 15 and 5 for flavor and aroma, dropping Cascade and Northern Brewer.
Since I switched out 1/2 of Maris Otter for an equal amount of Belgian Pilsner, I opted to do a 90 minute boil.
Another switch from original recipe is to drop Amber malt below 20% of grain bill, and to use American Crystal 80 in place of UK Crystal 90.
Late Addition sugar (Belgian Candi Syrup D-45 Amber) is added at the 10 minutes to go mark. Stirred in very well to avoid it sticking to the kettle. Better still dissolve the sugar in some of the wort before adding to the kettle. |

Using Wyeast 1318 instead of Whitelabs WLP067
Added 650 grams of acidulated malt to drop the PH to 5.2
Tweaked the water chemistry a little too - dropped the Baking Soda - 2:1 Calcium Chloride to Calcium Sulphate ratio
Use Epsom Salt, calcium chloride and calcium sulfate additions to adjust water profile to about 175–200 ppm chloride, 75–100 ppm sulfate, and 125–150 ppm calcium.
Mash at 149°F (65°C) for 60 minutes or until conversion is complete. Add half of the water salt additions to the mash and the rest at sparge. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 60 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), add the first dry-hop addition. About 4 days later, add the second dry-hop addition for another 4 days. Package at 2.6 volumes of CO2 and consume fresh.

bring 1.5 gal to165F; remove from heat. Steep grains for 45 minutes with no heat.
Add tea to 1.5 gal in boiling pot. Bring to boil.
