Notes: Oxygenate-aerate well. Ferment at 68 F for 7 days the rack into secondary. Ferment until target gravity has been reached (ideally 1.015-1.016) and beer has cleared (3 weeks prox.)
Three days prior to bottling, add Gelatin, and cold crash in the fridge to clarify the beer (optional but works great).
Prime and bottle. Carbonate at 70 to 72 degrees for 2 to 3 weeks. |

Notes: Step by Step
One week before brew day, get a WLP007 yeast starter going. When starter activity slows, decant the spent wort and add fresh wort.On brew day, crush the grains and place in two steeping bags. Steep the bags at 155 °F (68 °C) in 16 quarts (15 L) of water for 20 minutes. Rinse the grains with 2 quarts (2 L) of 170 °F (77 °C) hot water. Add dried malt extract (DME) and table sugar. Boil for 60 minutes, adding the hops at the specified times. Chill the wort to 70 °F (21 °C) and add water to achieve 5 gallons (19 L) of wort. Aerate the wort and add WLP007 starter (decanting the spent wort first). When fermentation slows, take a gravity reading and add WLP099 starter (if needed) to achieve a final specific gravity of 1.035. Keg or bottle carbonate, aiming for a carbonation level of 2.0–2.2 volumes of CO2. Once carbonated, condition at cellar temperature for several months. Flavor should peak at about one year and remain there for at least another year.
Tips for Success:
Pitching plenty of healthy yeast is paramount for a high gravity brew. When in doubt, pitch more. Be patient with the fermentation and conditioning process. Beer doesn't have a schedule. For bottle carbonation, pitch fresh yeast at bottling time if the WLP099 wasn't needed during the brew day. Give the bottles adequate time to carbonate. This beer needs to age, anyway. You'll thank me later for saving it until its peak. If you would like, try aging this beer in a bourbon barrel. How long to barrel condition is a matter of individual taste. Our club likes a full bourbon flavor, so we age the beer for several months. We don't worry about temperature. The barrel's alive, and varying temperatures allow the wood to expand and contract, imparting those wonderful oak and bourbon flavors. |

Notes: 3/4/17: This is one thread of a future blended English style "stock ale." Built as a ~7.75% export-ish stout to be blended with an English mild or ESB-like beer brewed at a later date. We'll likely blend to taste instead of a generic 50:50 but we'll have to see how this comes out first.
Update: Hitting temps pretty well and collected a lot due to slight oversparging. Going to have to boil down to get more concentrated wort. Makes sense because it's a few SRM from 40 right now.
3/25/17: This has been conditioning for a few weeks and has finally hit 1.021. The flavor is molasses and pumpernickel with herbal notes, some roast and cocoa. |

Pilsnermalten krossades med 1.2mm.
Vetemalten krossades med 0.8mm.
14:20, 62grC i mäsken, cirkulationen igång. Mäskbädden satte igen sig efter 10min, så jag fick röra om och sänka cirk.hastigheten.
15:00, Höjer tempen till 72grC.
15:10, 72grC är uppnådd.
15:25, Mäter PH till 5.6, tillsätter 7ml Mjölksyra och 10gr Gypsum, Kalciumsulfat som sänker PH och ökar humlearomen.
16:00, Börjar att laka ut 30l. och mäter PH till 5.2
Äter lite go mat innan koket.
17:45, Blöter jästen.
18:00, Värmer på i garaget.
18:35, Vörten kokar.
18:55, 1a givan.
19:50, 2a givan.
20:00, Silar av allt till stora grytan, spolar ur kokgrytan och häller tbx vörten igen.
20:10, Kyler vörten, får 21l. i tunnan, OG: 1.067, fyller på 3l. kokat vatten, skakar tunnan och pitchar med 1st påse jäst, ny OG: 1.059.
Ställer tunnan i pannrummet med ett solskydd på sig.
Pomeransen satte igen kranen, så använd alltid Bazooka i fortsättningen.
20170612: Flyttade in vörten på kallkrasch, ca 3grC.
20170619: Fyllde på fat, och så blev det 6st 0,5l flaskor som primades med 2st mocka sockerbitar. |

It's a very solid extra stout. It is probably closer in style to a Tropical stout, with its lower bitterness. |
