YEAST

Omega Yeast Labs OYL-011 (Wyeast 1318 London Ale III), 2.25 qt (2.14 l) starter, ferment at 70°F (21°C)
Target Water Profile
Use gypsum and calcium chloride to adjust to 125–150 ppm calcium, 165–175 ppm chloride, and 85–95 ppm sulfate for a finished SO4/Cl ratio of about 0.5. Use lactic acid (88% strength) to adjust water pH—we adjust both the mash water and sparge water separately (based on the volume of each). If you don’t have the capability to adjust mash and sparge water separately, make all of the mineral/acid additions based on your mash water volume. Always use de-chlorinated water.
Directions
Mash at 154°F (68°C) for 30–45 minutes (or until conversion is complete), target 5.3 pH. Sparge with 170°F (77°C) water and collect at least 7.25 gallons (27.4 l) of wort. Boil for 90 minutes following the hops schedule. At knockout, use a large stirrer and create a whirlpool to cool the wort for a few minutes. The closer you can get to 180°F (82°C) the better, but anything under 200°F (93°C) will work.
Add the whirlpool hops and let rest 10 minutes, then whirlpool again for a few minutes to create a nice compact trub/hops pile. Collect at least 5.05 gallons (19.1 l) of wort. Depending on your efficiency, feel free to collect some extra wort to offset loss due to dry hopping. Chill the wort to 70°F (21°C) and oxygenate. Between 1.020 and 1.024 (5–6°P), add the first dry hops to the actively fermenting beer. At 1.017 (1°P from FG), add the second dry hops.
Three to seven days after reaching FG, crash and rack off of the hops. Carbonate to 2.55 volumes CO2.

Fermentation ChambersFermentation:
Cool wort to 110 F and transfer into carboy.
Pitch 1 fresh vial of Lactobacillus delbruckii (WLP677) per 5 gallons of wort.
Ferment for 2 to 4 days at 110 F.
Cool fermentation to 65 F.
Pitch enough vials or an appropriately sized starter of Dry English Ale yeast (WLP007) & oxygenate for 1 minute.
Ferment at around 65 to 67 F until fermentation complete. I like to turn my temperature up a few degrees toward the last 25% of fermentation to drive attenuation & promote healthy fermentation characteristics.
Final gravity at this point should be around 1.018 (70% Attenuation).
Transfer beer off of primary yeast & pitch 1 vial of Brettanomyces lambicus (WLP653) per 5 gallons. At this point I transfer from a 6.5 gallon carboy into a 5 gallon carboy and I fill the carboy up to the neck to reduce surface area.
Age between 60 to 70 F.
Brettanomyces characteristics will develop over 3 to 6 months on average.
Over time attenuation will continue to increase to near 100%
The reason this process works well is because Lactobacillus is the organism which provides the lactic acid and sour presence in most sour beers. By allowing this bacteria to grow, feed, and properly establish itself in the beer before yeast is introduced, it virtually ensures that the beer will reach a proper level of souring |

| Notes: 5 gallons of wort from Mockery Brewing for a homebrew competition. Pitched the yeast and kept the fermentor in the guest bedroom with a space heater to keep the temp around 82 deg F. We dry hoppped with 1 oz of centennial on day 2 during active fermentation. Racked off the hops and yeast 4 days later onto the pulp of blood orange flesh and zest (removed peel / all the white parts). Will let sit on the oranges for a week and then add in rosemary infused vodka before kegging. |

| Notes: Steep grains in 3 quarts of water at 152 °F for 45 minutes (35% target efficiency). Add water to make 5.0 gallons, stir in dried malt extract and bring to a boil. Boil for 60 minutes, adding hops at time indicated (I used two different Magnum hops only because that's all that was available at the shop). Cool wort and transfer to fermenter. Add cold water to make 5.5 gallons. Pitch yeast and ferment at 68 °F (I used a starter to try and get to 355 billion cells per the Brewer's Friend calculator). Dry hop for 10 days to 2 weeks...longer if you dare. |

Notes: Bring 27 litres of water to 65C and steep speciality grains for 30 mins, keeping temperature constant.
After 30 mins, remove steeping grains, and add DME whilst bringing temperature to a rolling boil Set your timer for 60 minutes.
Add 60g Hallertau at commencement of boil, and maintain rolling boil.
Add 1 protflec tablet 15 mins before end of boil and stir till dissolved.
Add 20g Hallertau 10 mins before end of boil, and the remaining 60g once you have turned off the heat at the end of 60 minutes.
Cool the wort as quickly as possible, and ensure the temperature is below 23C before pitching the yeast. For a cleaner taste, use a starter for the yeast, but dry pitching will work adequately with 1x10g packet if the temperature is maintained above 15C.
Maintain a temperature of between 15 and 23C during primary fermentation, and test with a hydrometer after approx. 8 days to ensure final gravity is met and constant over at least 2 days before priming.
Once ready to bottle or decant to a barrel, dissolve 166g of corn sugar/dextrose in a little water, and rapidly cool by placing the pan in cold water. Gently stir this in to the fermenter being careful to avoid disturbing the sediment.
Bottle, or decant to a barrel, and leave for at least 3 weeks to ensure the beer has cleared.
Chill before serving.

Notes: Playing around with the hops. This was an extract kit from morebeer.com The 8oz of Cristal 20L was actually Honey Malt which is 20L but wasn't on the list.
OG came out at 1.056 pretty much spot on with the calculator above.
I did a 2liter starter over approx 34 hours before I cold crashed it and removed most of the liquid.
I pitched the yeast at around 73 degrees.
Fermentation started within 3 hours. It has been a very aggressive fermentation so far and the beer has cooled to 70 over the last 16 hours. I will take it down to 66 over the next day or so. |
