Mash at 150°F (66°C) for 60 minutes. Boil for 120 minutes. Add the molasses in the last 10 minutes of the boil. Caramelize the table sugar on the stovetop, cool it to room temperature, break it into chunks, and add it to the primary before you pitch the yeast. Ferment in the high 60s to low 70s Fahrenheit (low 20s Celsius) for 30 days. Move it to secondary fermentation for 90 days.

This recipe goes nuts when fermenting. I typically lose 15–20 percent of the batch out of the blow-off tube when it’s in the primary fermentor. I force carbonate and then bottle with a counter-pressure filler. I’ve had mash efficiency as low as 35 percent on this, so make sure you’re adjusting for your own system. |

Notes: Tastes is there, its difficult to get the yeast/chill haze that McMenamins has to stay even not using Whirlfloc/etc. May be easier in bottle, but with Keg everything settles out eventually. I can only assume they go through kegs so quickly they never have time to settle out.
DO NOT ACTUALLY ADD DEXTROSE, the line is only to represent sugar content from the puree so the ABV is accurate.

Rubys recipe isnt really a secret and it is also very simple. It is essentially a base of two row and raspberry puree (we use oregon fruit products).
Typically make a base beer of 2 row to get you a SG of 1.040-1.045. We add the raspberries about 10-15 points from TG. Typically you want your TG around 1.005-1.007. The great thing about oregon fruit products is its asceptic (flash boiled), so you can add it during primary (carefully).
Grab enough hops to get the ibus to under 5. (Neutral bittering hops at 60 minutes and thats about it.)
Recently weve been adding maltodextrine for body during boil but not necessary.
But thats about it. We do have a proprietary yeast strain that does provide a unique pub style haze anf flavor, but US-05 or an english house strain will do just fine.

Notes: This recipe is scaled to make 9 gallons of beer in a 10 gallon pot. I start with 9.5 gallons, boil it down to 8.5 gallons. I ferment in two 5 gallon corny kegs. Each Corny keg already has 1.25 gallons of preboiled, treated, chilled water. I brew the beer above gravity, bitterness, etc. knowing I will dilute it back down when I add it to the fermenter that already contains water. This allows me to brew 9 gallons of finished beer from one brew session. I usually only use this strategy when making lagers as it is nice to finish with more beer from the longer process and I can also fit 4 corny kegs in my fermentation freezer.
* I point this out because the volumes and amounts will likely look strange if you are trying to brew it. I would recommend going off of the percentages and scaling it to your system/volumes. |
