Notes: 1. Add water agents to 4 gals water in brew kettle, stir to dissolve.
2. Heat water to 155 degrees.
3. Add amylase enzyme; pilsner, honey, & carapils malts; and chopped potatoes to brew kettle. Raise temperature to 155-157 degrees and let items steep for 30 minutes then remove from the brew kettle.
4. Add ~3.5 gals water to wort to bring amount up to 7.5 gals. Bring wort to boil.
5. After 15 minutes boil, add 1 oz Simcoe hops.
6. After 60 minutes boil, add honey.
7. After 65 minutes boil, add yeast nutrients.
8. After 70 minutes boil, add Whirlfloc tablet.
9. After 72 minutes boil, add Idaho #7, Idaho Gem, and Experimental ID-158 hops.
10. After 75 minutes of boil, turn off heat, top-up wort to 6.5-7 gals with distilled water.
11. Add Idaho #7, Idaho Gem, and Experimental ID-158 hops to wort for 15 minutes of whirlpool/hop stand part of resting period.
12. When fully cooled, transfer to fermentor, aerate, then pitch yeast.
13. After high krausening subsides (3-4 days) add Idaho #7, Idaho Gem, and Experimental ID-158 hops to fermenter for dry hopping.
14. After 7-8 days in fermentor, transfer wort to Corney keg and refrigerate. If desired, can add corn sugar at this time for secondary fermentation & carbonization.
15. After 1-2 days of refrigeration, force carbonate with pressurized CO2.
As a 4th generation Idahoan who lives near where the bulk of Idaho hops, barley, and potatoes are grown, it only made sense to brew an IPA featuring these Idaho products. |

Notes: Mash: Add 2.04g of Calcium Chloride and 1.2g of Gypsum to water (3 gal) prior to heating. Mash at higher temp (160F) for better mouthfeel. Causes more dextrin in the mash. Pre-boil pH should be between 5.3 and 5.5.
Boil: Dissolve flour in small amount of warm water and add at 15 min. Post-boil pH should be between 5.0 and 5.2
Whirlpool: Chill wort to 170F and let hops steep for 20 minutes. Then chill wort as usual.
Primary: Add 0.68g of Calcium Chloride and 0.4g of Gypsum for every gallon of water that is needed to top to 5 gal in the primary.
Bottling: pH should be around between 4.2 and 4.6. |

Notes: They seem to change Blackhouse recipe a few times, but I based this off a combination of the current grist shown on the Modern Times website and this recipe supposedly posted by MT themselves http://beersmithrecipes.com/viewrecipe/230943/black-house
Using Amber malt because Biscuit is not available and Victory is 3x as expensive.
Using a smaller percentage of regular Chocolate malt because I didn't have Pale Chocolate (would have done about 8% of the latter).
My Warrior hops said only 15.2%AA (default was 16.7) so I used a bit more
Wanted to use lower attenuation yeast to keep the FG higher (Blackhouse is 1018), happened to have WLP051 on hand. Would have used WLP001 otherwise.
BOTTLING UPDATE:
Tastes a it strongly of bitter coffee before adding coffee beans, so maybe use a smaller percentage of coffee malt next time. Bottled 3L without coffee, and racked another 8.5L or so onto 50g of whole beans (30g Sarutahiko's dark blend and 20g About Life's Ethiopia Heirloom). |

Notes: 3/14/15: Brew day.
Steeped specialty grains for 20 minutes in 2.5 gallons of distilled water, at 153-148ºF.
Added 3 gallons of distilled water, covered, and heated to a boil.
Added DME and LME, and 0.5 ounce German Tradition pellets. Boiled for 75 minutes. Added 1 tablet WhirlFloc with 15 minutes left in the boil.
Chilled to 65ºF using immersion chiller, let stand for 15 minutes, aerated for 40 seconds and added solid stopper. Gravity 1.054. Transported 25 miles in a car.
Aerated for another 40 seconds intermittently and pitched a smack pack of Roeselare, as well as the bottle dregs from Tilquin Oude (Gueuze Tilquin)², Lindemans Gueuze Cuvée René, and Allagash Midnight Brett.
Installed blowoff tube and left in closet to ferment at ambient temperature of 66ºF. Vigorous fermentation 24 hours later.
4/12/15: Added dregs from a bottle of Hanssens Artisanaal Oude Gueuze.
4/19/15: Racked to secondary and added 1 ounce of Burgundy-soaked oak cubes.
10/29/15: Pulled a sample. Gravity at 1.008. Smells of leather, cherry, mild funk. Flavor has a light, yogurty acidity, mild fruit and funk, and full mouthfeel. |

Tried this one a bit early as I was out of beer, but it is bloody beautiful. In fact I think I'll put another down this weekend.
I did make the second batch, and knocked it off just as quick. Have discovered my thermometer on the mash tun was way off, so will be making some changes next time. |

Notes: Spicy Winter Brew. Spice tincture made from cinnamon stick, vanilla bean, orange peel, cloves in grain alcohol, steeped for 3 weeks. Added to secondary fermenter. In secondary for 5 days. Bottled with 4 oz corn sugar boiled in 1 pint of water.
