Note: water profile is arbitrary as I am not testing or modifying the water, it will be standard southern UK tap water, filtered.
Came out nice however would benefit from more body and more fruit flavours.
Also smokey flavour was barely noticeable, will add much more smoked wheat in next batch. |

Belgian Abby Malt (Castle Malting) milled in mazer coffee grinder (very messy) and then flour sifted out.
Coriander and Orange stepped at ~190F
"Steeping grains" mashed in separate pot and then sparged in main brew pot.
Starter created from ~1L of wort (without the Candi Syrup) using half the starter from prior night after quick cold crash. The other half of the starter will be used during bottling. Stirrer plate used. |

Notes: Steep grains in 3 qt tap H2O. at 160/150 (actually ran temp up to 170 on accident according to thermometer, though this candy thermo appears to register 10F high).
Boil size app 2.25 gallons, ought to be 2.4 per recipe (need bigger kettle), added DME near boiling point. Accidentally tossed in some of the flavoring hops at 60 minutes, not off to the best start.
Added flavoring hops and Irish moss and extract at 15 minutes.
Aroma hops as the pot was put into iced sink. Pitched the malt "tea" directly into the primary, did not add to boil as suggested in recipe - would probably have overflowed.
Pitched yeast at about 78F, put in Anny's room.
OG 1.044
Removed from Anny's room following day, put next to wall heater, maintained about 70F, rotating bucket. Kept in primary 4 days, racked to secondary, moved to tool room, app 65F.
Dry hopped in a cheesecloth dangling from the airlock, for two days, removed sack.
Bottled on April 24. Wort is amazing. Unfortunately, only 4.5 gallons, or 26 bottles.

Designed to contribute a biscuit flavor to beer. With its characteristic and bold sourdough flavor, it will contribute an exciting layer of flavor to Nut Brown Ales, Porters and other dark beer styles. Lends toasty, biscuity, tangy, and sour dough flavors to your beer. This malt is particularly suited to English Ales. The malt provides a deep golden to brown color. For nut brown ales, use 5-10% of total grist. For dark amber and other dark beers, use 2-5%. For porter, use 5-10%.
Victory is Briess’ biscuit style malt, lightly roasted to bring out the nutty, toasty, and biscuit flavors and aromas associated with baking bread. It’s an excellent malt for adding a layer of dry toasted complexity and a russet brown color to a wide range of beer styles. Use in small amounts to add a touch of warmth to light ales or lagers, or use in larger amounts (up top 25%) in darker beers to bring out more of the toasted biscuit flavors. 28°L
Black malt will give a sharp roasted flavor and deep red to black color. Used in porters, stouts, and dark ales and lagers. Midwest suggests using this malt in moderation.
Chocolate malt will give your beer a warm, nutty, chocolate-like flavor. Just a few ounces in a batch will impart a slight brown color. Use up to a pound in porters and stouts and dark lagers.
Caramel 60 is a widely used, versatile, medium crystal malt that will contribute a rich sweetness, and pleasant toasted bread and pronounced, full caramel flavor with a light reddish hue.
