Notes: my first attempt at a brown porter. grist designed to be malt forward with vienna added for head retention and victory added for biscuit and bread complexity. I cold steeped the chocolate malt in 32oz cold filter water to limit astringency. hop additions are definitely on the upper end for style but believe will balance nicely with complex grist.caoco powder added late in the boil to add a dark chocolate flavor |

Notes: Once I added the 8 lbs of fermentables at 10 mins, it never really fully boiled again; I'd probably add them at 20 next time.
The flameout hops got whirlpooled for 10 minutes before cooling down.
Lastly, pitched the packet of US-05 directly into the wort and aerated it, even though I've read not to. Next time I will use two packets. Even though it fully fermented, it never carbonated all that well because of a lack of yeast.
A good double IPA. My rating: 8 out of 10.

Notes: 2 packs of M31 used after rehydration (in 100ml water - less than suggested).
Started at 18c ferment then raise to about 24c over a week.
Temp rise was about 1c per day for the first 6 days. It was struggling to warm up after a couple of days I guess because of very cold garage. Was in my largest fridge with only a copper tun heat pad for warmth.
Added sugar as a syrup after 7.5 days in primary. Loads of estery smells from fridge at this point. |
