Notes: Basic recipie from grey hughes book home brew beer with a few tweaks
Note: water profile is arbitrary as I am not testing or modifying the water, it will be standard southern UK tap water, filtered.
Came out nice however would benefit from more body and more fruit flavours.
Also smokey flavour was barely noticeable, will add much more smoked wheat in next batch. |

Notes: Zest and save all the oranges. Once the oranges are zested remove the fruit from the rind. The fruit and zest may be placed in a straining bag for easy removal after fermentation. Heat fruit and peels in 1/2 gallon (2L) of water to 160 degrees F (71C) and then turn off heat. Let it steep as it cools. Pour blood orange peels and fruit into the wort.

Notes: Starter made from 1.5 L water and 100g light DME, boiled down to 1L. Make starter Friday morning, into fridge Sunday morning, brew Monday.
Pour from 8 gal to sanitized 5 gal kettle post boil so it will fit in ice bath.
Speaking of, buy more ice beforehand!
Cool to 65, whirlpool for 20 minutes, siphon from kettle to fermenter (through strainer?)
Ferment @ 65 until SG stable for 3 days, raise to 68 for diacetyl rest for 3 days. Then bottle! |

Forgot to add the 2 lbs of oats
Transferred to secondary on top of 10 pounds of strawberry and two vanilla beans. The smell is strawberry and very slight hopiness. The taste is creamy strawberry with just enough vanilla to come through. This has a slight tang near the end which could be from the lactose or the fresh strawberries. This is a keeper |
