| Notes: Soak the medium roast oak chips in the scotch for at least 2 weeks prior to secondary fermentation. Add enough of the scotch whiskey to taste. I am using Macallen 12 yr single malt. This will need 2l yeast starter fo ferment properly. Ferment at 65-68F. |

A collaboration with Omnipollo, known for their uncanny ability to repilcate dessert flavours in indulgent beers. This caramel and pecan flavoured imperial stout has been barrel aged for almost a year in whisky casks, to add an extra level of depth to the pecan mud pie concept. Don’t be too quick to rack the beer off the yeast once your final gravity is reached. The stressed yeast will be absorbing a number of undesirable fermentation by-products such as acetaldehyde and diacetyl. Give them a minimum of 10 days at fermentation temperature to do this before cooling it down.

Zacieralem w ok. 3.5 l wody kranowki. Wyslodzilem ok. 2.5 l wody. Otrzymałem 4.5 l brzeczki o 9.3 P. Kolor mleka.
Otrzymalem prawie 11 l brzeczki o 15.1 P. Na powietrzylem blenderem i zadałem 6 łyżeczek drożdży. Temperatura 22C.

9:00 drożdże się namnozyly i są na dnie. Brak bulkania.
18:00 brak bulkania, drożdży na dnie nie widać Otworzyłem pokrywę i zobaczyłem, że utworzyły piękną czapę piany. Czyli gdzieś jest nieszczelność i gaz nie wychodzi przez rurkę. Ten fermentor ma niewielki ubytek na rancie, więc pewnie uchodzi tamtędy.
Od soboty dogrzewałem piwo przy kaloryferze. Max. temp. jaką osiągnęło to 26 C.

Wieczorem zmierzyłem ekstrakt. Wyszło 1.012, czyli 3.1 @ 21 st. C. Myślę, że w przypdaku już piwa nie można robić takich korekt temp. jak w przypadku brzeczki

On Brewing day, made tincture of spices with all spices covered with everclear to add on kegging day to taste.
Kegged and added 300ml of spice mixture. Required a little more vanilla and used 100ml of vanilla extract to perfect flavor. |

Notes: Oxygenate during knock out @ 70 degrees F. 400ML 1056 slurry from Get Sum. Water back to 14.5 gallons. No mash salts, only gypsum 1 tbsp in kettle. Yeast nutrient sprinkled in kettle @ whirlpool.
FERMENTATION NOTES**Huge Krausen**
Activity 3 hours after pitch, 70-72ºF first 24 hours. Fridge died 24-36hrs 82ºF, 36-48hrs fridge cooled down 68-70ºF, good fermentation for 8 full days.
Pulled yeast and dry hopped day 16. FG 2.9ºP
