Notes: This was originally a much more conservative recipe to make an amber ale. Two mistakes happened:
1) I did not use enough water when steeping.
2) I used twice as many hops as I was supposed to.
To save this recipe, I added more DME. I also adjusted the amount of grain in this recipe to reflect the OG.
In the end it turned out as a delicious balanced Scottish Ale. |

| Notes: Make sure you make a proper sized starter, pitch cool at 65˚F then set your regulator to 66˚F, let it rock for 3 days, then raise the temp to 70˚F for a couple days to encourage complete attenuation and reabsorption of fermentation byproducts. At this point, I usually crash the beer to 32˚F for a couple days then keg per my typical method, pouring the first pint a couple days later. |

This is a nice beer that falls somewhere on the american pale ale family or the india session ale (ISA) category. Very light body with a big hoppy nose that isn't overly bitter. The vienna is essential to the complexity of this beer, so don't substitute it. Also, reduce consider reducing the dry hopping by .5 oz as the hops slightly mask the clean base malt.
Also, different yeast strains might work well with this beer, perhaps try using a highly attenuative british strain for a more complex flavor profile (something this beer could use depending on the season you brew it ie. summer stay crisp and clean, winter get weird). |
