Notes: If you don't have whirfloc use irish moss. Carb to 2.5 volumes of C02. Add sugar in the last 10min of the boil. For the thing marked "whirpool addition" just cut the flame after you have boiled for 60min, throw the hops in, and let it sit for 15min. It's basically steeping it. If you aren't going to make a starter use 2 vials of yeast. |

Notes: This is inspired by Rogue'S Dead Guy Ale (~6.5% abv) using a combination of recipes, the primary one being Yooper's AG (also EricCSU & AHA.)
For AG, I find that I like this recipe best:
10 pounds maris otter
1 pound Cara-Munich
1 pound Munich
1/2 pound crystal 40L
Mash at 156-158 for 45 minutes or until conversion. Sparge to get up to boil volume.
Hops:
1 ounce Perle 60 minutes
.25 ounce perle 30 minutes
.25 ounce perle 5 minutes
.25 ounce saaz 5 minutes
Shoot for an IBU range of 30-35. My perle hops have been all over the map as far as AAUs go- I have some that are 9.3% and some that are 6.9%, so you may need to adjust these amounts. |

When fermentation has completed, blend Thai tea spices. Bring about one quart filtered water to a boil, pour over 8 Chinese star anise, 1 oz. (28 g) orange peel, 1 vanilla bean, split and scraped, 5 whole cloves and 2 cinnamon sticks. Cover and let steep for 15 mins, then strain to remove spices.
Start with 2 cups, blend and taste. Continue to add and stir until desired flavor is reached. |
