Notes: (1) Start preparing hot water ... immerse liquid malt packs in some hot water for 20-30 minutes so they will flow and dissolve easily.
(2) Steep specialty grains in several liters of very hot water, then strain liquid into boil kettle, and rinse grains with a couple more liters of hot water.
(3) Add more hot water to kettle to about 14 liters. Keep applying heat until liquid is about 70 degrees. Then add contents of liquid malt pouches, rinsing them to dissolve all malt inside.
(4) Top up boil kettle to 20 liters total and bring to boil.
(5) As soon as boil commences, add 60 minute hops and then start timing.
(6) Add later hop additions and yeast nutrient and Whirlfloc at appropriate times.
(7) Chill and transfer to fermenter. Sparge hops. Top up fermenter to 21 liters. (a tad over 5.5 gal)
(8) Don't be too concerned about the temperature. Just get it to 25-30 degrees. Then into the fermenter. Then place fermenter in temperature cabinet set at say 16 degrees. leave for 24 hours and then pitch yeast and re-set tem controller to 19 degrees. |

Based on Tank 7 from Boulevard Brewing Company.
I first brewed this with Brettanomyces Lambicus. It was really, really good. Lots of fruit and bitterness. Quite earthy. Replace MO with Pilsner malt for a much, much crisper beer.
I pitch a huge amount of Brett into this without aerating it, leading to a very clean fermentation. I made a 1l starter that used about 8 days to ferment out (Brett Lambicus from White Labs is pretty agressive). It takes a couple of days for the yeast to settle down, brett isn't very good at flocculating. Keep an eye on FG to be sure it has fermented out properly when bottling.
The carafa malt is only to add a redish hue to the beer. Without it it might develop a light greenish hue, which isn't that nice (it gets quite pale - I like redish beers). The beer is quite foggy. I haven't tried adding anything to clear it out. Since there are no style guidelines - do as you please.
This beer will funk up over time. For a sweeter variant use Brett C which will not ferment out as dryly.

To brew this Kentucky Breakfast Stout clone, perform an infusion mash at 155°F (68°C) for 60 minutes. Boil for 90 minutes, adding hops, chocolate and coffee as specified. Ferment for two weeks at 65°F (18°C). Soak 0.25 oz (7 g) toasted French oak chips in 1 cup (237 ml) Kentucky bourbon for two days. Soak ground Kona coffee in 1 cup (237 ml) boiled, cooled water and leave overnight, covered, in refrigerator. Strain out grounds and add cold-brewed coffee, bourbon and wood chips to sanitized secondary. Rack fermented stout onto this mixture and condition in secondary at 55–60°F (13–16°C) for 2 to 6 months. |

OG was 1.065...a lot lower than expected.
13 grams of gypsum added to 11 gal of distilled water. No other salts were added.
Boiled 1.5 gallons inside for 1.25 hours and added to boil kettle to give 7 gallons post boil. Ended up with 6+ in fermentor. I think this diluted the OG to bring lower.
Made San Diego super yeast starter (2L) on Saturday at 1pm, but added WLP001 on monday morning at 9am. Brewed monday and pitched at 65F at 4pm.
Oxygen was nearly gone from can, but slowly bubbled for 2 mins, then shook for 30 seconds to further aerate.
Fermented at 65F for 72 hours then let naturally rise to 68F thursday night.
Still bubbling from blow off tube every second at this time.
Adjusted temp to 72F and let free rise on day 6
FG was 1.009 on day 12
Transferred to secondary day 12 on dry hops

Add the following to each 5 gallons of water:
Gypsum - 2 tsp
Calcium Chloride - 1/2 tsp
Pre-Boil Volume = 7.75 Gallons
Add 5 drops Fermcap-S at boil
Add Corn Sugar with 15 minutes left on the boil
Add Whirlfloc tablets 15 minutes left in boil
Filter hops by putting a 5 gallon paint strainer bag into the primary and pouring wort through the strainer before pitching yeast
Rehydrate US-05 prior to pitching
1) Warm the dry yeast to room temperature
2) In a sanitized container, prepare 1/2 cup of sterile water at 95-105°F
3) Sprinkle the dry yeast on top of the water, trying to avoid setting up large, dry clumps.
4) Let sit 15 minutes, then gently stir.
5) When the yeast has reconstituted, gently stir again to form a cream and let sit another 5 minutes.
6) Carefully and slowly, adjust the temperature of the yeast to within 15°F of the wort temperature.
7) Pitch the resultant cream into the fermentation vessel, ideally as soon as possible. |
