Notes: Plan is to make to beers on with OG around 1070 9l and one with OG aroung 1100 4l, the 4 liters beer will be added mushrooms for interesting tase notes. The recepie is as such made for a 18L 1070 where as 8L will be boiled down to 6L and 2 L boiled down to 0.5L and added at high cresant with 50g sugar and 50g Dextrose to dry out the beer and increase the gravity and caramel like flavors from the boiled down wort.
Crystal 60L is seen as 150EBC (will be a tad lighter) |

Notes: Can use altbier yeast (WLP 036) also, but Kölsch (Wyeast 2565 or WLP029) is more attenuative (or also a Belgian Abbey strain, or WLP 810 SF Lager). Could also add some oak cubes for a wood-aged version. Lager for 1-2 months.
No subcategory for this historical style, so I just entered under Düsseldorf Altbier, since this is a similar (but bigger and more complex - smoke and maybe slight sour) beer from Düsseldorf.

Notes: Actual SRM appears to be about 25-26, Compare with Kulshun Red Cap both in color and taste. Mine is less IBU than the Kulshan.

Primary fermentation was quick, 3-4 days in 5 gallon plastic carboy. Transferred to secondary 5 gallon plastic carboy on day 8. Cleared by day 16. Used a 5 gallon carboy as bottling bucket, to which bottling sugar/water had been previously added.
Loss from transfer amounted to 10 pints. so actual bottling was 30 pint bottles.
Allowed 15 days conditioning at 66F. Very drinkable, nice head that dissipates in about a minute. I suggest using more hops to increase the IBU as it is very light. |
