Notes: Starter used 1/2 package of dry to build up to 150B cells. Used 80gm DME light in 750ml water. On stir plate for 18 hours.
Starter was prepared 2 days before brew date. Twelve hours before pitching the flask was refrigerated. At pitching 500ml was poured off, remained mixed to suspend yeast, then poured into aerated wort.
Sparge water is distilled.
Need for protein rest is 50:50. Last batch incorporated 10 min and result was excellent. Changing malts and hops and lightening up the water this time, so perhaps the P-rest should stay.
Ok, at last minute decided to do 3 rests at 122F for 10, 140F for 10 and 153F for 45.
Substituted Carahell as I was out of Crystal 10 malt. |

Notes: Experimental brew using 2 Ghost Peppers and dry hopping with Russian Hops.
Made this at a "Teach a Friend to Brew Day"
with the Sangre de Cristo Craft Brewers Club hosted by Santa Fe Brewing.
The pepper went in with :15 to go on the boil and produced a nice bit of heat without any veggie flavor. The hops where smooth and subtle.
So far haven't found anyone who didn't like it and I would brew it again except I don't brew repeats. (Too many ideas, too little brew capacity!) |

Notes: Split batch - 5.5 gallons Kolsch ale yeast, 5.5 gallons Belgian (Wyeast 3655).
Kolsch - 2L starter + Clarity Ferm. This half gets the fridge. Start on the cool end for 4-5 days, bump up to finish out, then cold crash for a couple of weeks.
Belgian - 2L starter, but keep 500ml aside. Pitch at 65F, then allow to free-rise at cellar temp.
We will need Fermcap for this one before the boil. |

Notes: This last brew after 3 weeks in the bottle is so close to what I was looking for I think it's dead on for style and taste. Another week or two will improve it I'm sure. I started the fermentation temp at 65° after four days raised it to 74° over a period of 9 days
1) When I last brewed this I did not have WLP400 so I used Wyeast Belgian Witbier 3944
2) Next brew will bump up the Grains of Paradise to 2 grams
3) Slightly toasted the Coriander on the stove-top before crushing
