| Notes: This wild Ontario ale yeast was isolated from an apple in a local orchard. Wild Thing produces distinct clove, spice, and subtle banana and apple fruit aroma. The taste is dry, spicy and clean. This yeast is most comparable to medium-attenuation Belgian-style ale yeasts. May require temperature ramping to 25C to ensure high attenuation |

Notes: ##Description##
A beautiful IPA that is well balanced with Crystal and Cascade hops, and spiced up with adding coffee!
This is an AWARD WINNING beer, taking 3rd in the "Specialty IPA" category in the 2020 SheBrew Competition. (link will open awards page. Link is safe, security certificate expired. Message if you would like PDF sent directly to you)
## Notes##
Dry hop in secondary by adding pellets directly to carboy. I let it sit for 3 days, but could stand for up to 5. Any longer and you'll get a grassy flavor.
Coffee used is Lucky Jack Cold Brew CONCENTRATE. It was not diluted. This is a key point to add. We came up with the ratio by measuring out 1 cup of IPA and adding 1/2 tsp a time until we got a flavor profile we liked and then scaled up.

Notes: Pecan Pieces were roasted on the stove top, stirring frequently, stopped, blotted with a paper towel trying to soak up any residual oils, then toasted again, and blotted again.
Water for the coffee was boiled, covered with sanitized aluminium foil, and chilled. 2 - 1 ounce HEB "Texas Pecan Coffee" was added to a 64 ounce sanitized container and water added, then refrigerated overnight. The cold brewed coffee was strained and added at kegging.
This beer won a Pro-Am with Operation Fermentation, (Cane Island Alers) in 2017. This beer was later brewed with No Label Brewing. |

Temperature of strike water:
169.4 (F)
4oz Home grown at 185F for 10 mins after boil
Home grown hops broken into small pieces for max exposure
Irish Moss soaked overnight
Yeast hydrated for 15 mins
Fragrance out of this world, taste citrus, pine, grapefruit. The additional of the hops at 185F after the boil added a superior taste and fragrance, this is a new method for me and will be using for all brews going forward. Home grown hops add so much more character than purchased pellets or leaf, there is no comparison |
