French Strisselspalt hops for the late addition would be good as well. Lots of possible yeast choices for Biere de Garde: Can use a cool-fermented hybrid strain like Kölsch or Alt (German Ale), a Belgian Ale strain fermented on the cool side (don’t want too high esters and phenolics, but some), such as WLP 515 or WLP 570/Wyeast 1388, a farmhouse strain like Wyeast 3726, or Wyeast 3725-PC (Biere de Garde), WLP 072 (French Ale) or WLP 073 (Artisinal Country Ale) would be ideal... if you can find any of them. Additionally, can use a lager strain fermented on the warm side. Lager for 1-6 months, if you can wait that long! Won silver in Belgian Ale category at the 2018 Dixie Cup competition.

Chill rapidly to 70, transfer to fermenter, top up to 5 gallons, take gravity reading, top up to 5.5 gallons, pitch yeast, and ferment for 7 days. Transfer to secondary onto dry hops and ferment additional 14+ days. Add Gelatin (optional) 3 days prior to bottling and cold crash in fridge to clarify beer. Prime and bottle. Condition 21 days at 70-72 degrees. Chill 3 days..enjoy! A beautiful beer.....

This will add another level of complexity to your beer and make for a superior Black IPA. Make sure you get Carafa 3 special because it is a dehusked grain that lowers any off flavers from the grain husks. Steep grains at 150 to 160 degrees for 45 mins with just enough water to cover your grains then rinse grains with 1.5 gal of 170 degree water. This was the first time I had brewed this recipe and it turned out to be my second favorite beer I have brewed and the best black IPA I have ever drank and I have drank many different black IPAs.
