It’s issue 100! Cue the confetti and the noisemakers. I guess we should make a celebratory homebrew. Looking back, it’s apparent I’ve been wrong about the full title of my column all these years. I thought BYOB meant “Brewing Yummy Odd Beer” not “Brew Your Own Beer.” Awkward… but either way, the brew must go on! This month, let’s take a page from one of my brewing mentors and brew a chocolate cake beer.

Cake is a mixture of wheat flour, sugar, flavorings, eggs and butter. The last two ingredients contain copious fats that make it a complicated beer additive. Yet to brew a true chocolate cake beer, one must have chocolate cake.

Order a full sheet cake from a baker. Ask for no frosting or remove it. (No judgment if you eat it.) Add the cake, crumbled, to 1–2 quarts of boiling water. Stir and boil until the cake is completely dissolved. Simmer gently for 15 minutes. Cover and cool the cake slurry overnight in the fridge. Scrape off the fat cap.

Add the defatted cake slurry to your Stout mash and proceed as normal. I learned this from fellow Falcon M.B. Raines, who did it to celebrate the birthday of Doug King with his leftover cake and has used it to great effect several times since. Here’s to a few hundred more Yummy Odd Beers.

Some recipes call for british crystal and melanoidin/aromatic malt. The Keg version is supposedly just golden promise and a pinch of roasted barley during the sparge (for color). Going with the crystal route the first time hoping it brings some color and sweetness.

Notes: Brewed 6/22/14. Hit 151 on the mash and recirculated about 1 gallon. Mash ph was 5.1 which is way lower than what I expected and what was theoretically calculated. Might splurge on a new meter. Couldn't get it to clear during vorlaugh for some reason either. Have had that issue before but dunno why. I had bad kettle (77%) and overall efficiency again and I am really not sure why. I don't think it's from sparging too quickly. It's possible that the pH meter isn't off and I am really getting low efficiency. The last few beers I have made have been low efficiency. Maybe I am not getting full conversion. I also didn't drain all of the wort off I could from the boil kettle so I had to top off with about a half gallon of water which may have played a factor. I think I had a lot of protein in the boil which played a factor. Temp dropped down to 60F so I heated it back up to 68F. 6/23/14 topped off with half a pound of corn sugar to hopefully boost the gravity up to 6%. Temp was 66F in the morning and had drifted up to 69F by evening. Temp in the morning was about 66F and had crept up to about 69F by evening so I cooled it back down to 66F. Temp was about 67F in the morning and crept up to 69F by the evening so I cooled it back down to 66F. Took out of swamp on 6/26/14. Took gravity reading (1.010) and dry hopped on 7/6. Biofined 7/12. Kegged 7/16/14, very clear.

Directions
Mash grains at 151-152° F (66-67° C) for an hour or until starch conversion is complete.
Mash out at 170° F (77° C) and sparge. Collect 8 gallons (30 L) of runoff, stir in dextrose,
and bring to a boil. Add hops as indicated in the recipe. After a 90 minute boil, chill wort
to 67° F (19° C) and transfer to fermenter. Pitch two packages of yeast or a yeast starter
and aerate well. Ferment at 67° F (19° C) until fermentation activity subsides, then rack
to secondary. Add first set of dry hops on top of the racked beer and age 7-9 days, then
add the second set. Age five more days then bottle or keg the beer.

Extract Substitution
Substitute 6.5 lb (3.0 kg) of light dry malt extract for two-row malt. Due to the large
hop bill for this recipe, a full wort boil is recommended. Steep grains in 1 gallon (3.8 L)
of water at 165° F (74° C) for 30 minutes, then remove and rinse grains with hot water.
Stir in dextrose and top up kettle to 8 gallons (30 L), and bring to a boil. Add hops as
indicated in the recipe. After a 90 minute boil, chill wort to 67° F (19° C) and transfer to
fermenter. Pitch two packages of yeast or a yeast starter and aerate well. Ferment at 67°
F (19° C) until fermentation activity subsides, then rack to secondary. Add first set of dry
