Notes: Mash tun was too small for all the mash water. Infused with 10 gallons instead of 8. Mash was hot, around 160F. Had to leave mash open for 30 minutes to get mash down to 152F. Notes: Strike water was about 175 which brought everything down to about 152 on average (154 in the middle). The mashout actually ended up being too strong and brought it up to 180ish so I put 2 quarts of cold water in immediately to try to stem tannen extractions. I got lower efficiency than I expected. Not sure why but could have been the 2 row pale or that I had grain balls that didn't convert. |

After three weeks in the bottle, compared to a Former Tenant can dated 06/03/2018.
Appearance:
Colour is super close. The homebrew (HB) leans ever so slightly towards amber, while the FT has a genuine cherry red hue. Head on the FT is a more tan colour, compared to paler HB.
Aroma:
Not dissimilar! But there are distinct differences. FT smells of resinous pine, stewed fruit, ripe pineapple and dark Christmas cake. HB has a lighter, more green, tropical melon-fruit aroma, pineapple and passionfruit, and lacks the pine of the FT.
Taste:
Both beers are initially malty. FT has an early slightly sour acid, before rich palate-coating resin, big bread and biscuit and strong lingering bitterness. HB is sweeter, bitterness is similarly lingering but not as assertive up front, malt character a bit more restrained.
Overall:
Not a perfect clone, but the home brew is in the ballpark. I wanted to all-grain brew so I could make the beer I really wanted to drink, and this is almost as good as the real thing. I find the slightly more restrained, sweeter (but this is still a big red IPA!) character of the home-brew makes it easier to come back for more, but the FT is the beer that smacks you in the cheeks and makes you pay attention. I’m pretty stoked to have a couple of cases of this in store, especially when the FT is $13/500mL! |

Notes: After active fermentation is complete, puree 5 lb mango* in a food processor and boil for 15 min, then add it to the empty secondary fermenter. Rack primary over mango mash in and gently stir. Keg in about 2 weeks. Make sure it tastes almost too fruity, as carbonating and conditioning will cause it to fade.
*I bought 10 lb of mango, which was pretty close to 5 lb of mango flesh after peeling and removing the pits. |

Extras
1 chocolate sheet cake without frosting. Crumble and boil in 2 quarts of water. Cool overnight and scrape off any fat. Add to mash.

It’s issue 100! Cue the confetti and the noisemakers. I guess we should make a celebratory homebrew. Looking back, it’s apparent I’ve been wrong about the full title of my column all these years. I thought BYOB meant “Brewing Yummy Odd Beer” not “Brew Your Own Beer.” Awkward… but either way, the brew must go on! This month, let’s take a page from one of my brewing mentors and brew a chocolate cake beer.
Cake is a mixture of wheat flour, sugar, flavorings, eggs and butter. The last two ingredients contain copious fats that make it a complicated beer additive. Yet to brew a true chocolate cake beer, one must have chocolate cake.
Order a full sheet cake from a baker. Ask for no frosting or remove it. (No judgment if you eat it.) Add the cake, crumbled, to 1–2 quarts of boiling water. Stir and boil until the cake is completely dissolved. Simmer gently for 15 minutes. Cover and cool the cake slurry overnight in the fridge. Scrape off the fat cap.
Add the defatted cake slurry to your Stout mash and proceed as normal. I learned this from fellow Falcon M.B. Raines, who did it to celebrate the birthday of Doug King with his leftover cake and has used it to great effect several times since. Here’s to a few hundred more Yummy Odd Beers. |

Notes: Mix grain with strike water and mash the appropriate time suggested in the mash schedule above and then mash out. Fly sparge with 0.34 gal water at 168 F. Boil 6.22 gal for 60 minutes adding the bittering hops at times suggested in the ingredient list. Add the whirlfloc tablet when 15 minutes remain in the boil. After the boil is complete, chill the wort rapidly to 64.0 F and transfer to a sanitized fermentation vessel. Ferment at 64 F for 7 days. Transfer to secondary and add your chiles. Once the desired level of heat has been added, crash the beer for 3 days at 39 F and then bottle or keg with priming sugar (skip the sugar addition if force carbonating in your keg). |
