Notes: I've had a couple of "golden stouts" that I thought were very interesting and good, so my goal was to mimic that with my own recipe. I wanted to use golden/blonde ale as a general style, though I knew this was going to fall outside of some style guidelines.
I used lactose to provide some residual sweetness (think creamer in coffee), which worked really well I think. I tasted the beer after a few days in the keg (pre- coffee addition), and it had some sweetness but not too crazy. To add coffee flavor, I got some whole beans from a semi-local roaster (Wichita Spice Merchant). I spoke with one of the roasters there and he recommended "Brazil Maniqueira" (https://www.spicemerchant.com/product/brazil-mantiqueira/). I know next to nothing about coffee, so I would recommend using something you like or, if possible, consulting your local roaster. I added 8 oz of the coffee beans to a nylon mesh bag with some glass beads (to use as an anchor), and suspended the bag inside the keg with some unwaxed/unflavored dental floss. I tasted at 2 hours and was surprised how quickly the coffee flavor came through, but it wasn't quite where I wanted it. I tasted again at 4 hours and 7 hours, at which point I decided to pull the beans. The beer is pretty light so I didn't want to overpower the beer with coffee flavor. It ended up adding the desired roastiness and complexity that I was looking for. I'm super happy with this recipe. |

Notes: Overall Impression:
A highly-attenuated pale lager without strong flavors, typically well-balanced and highly carbonated. Served cold, it is refreshing and thirst-quenching.
Aroma:
Low to medium-low malt aroma, which can be grainy-malty or slightly corny-sweet. Hop aroma may range from very low to a medium, spicy or floral hop presence. While a clean fermentation profile is generally most desirable, low levels of yeast character (such as a light apple fruitiness) are not a fault. A light amount of DMS or corn aroma is not a fault.
Appearance:
Pale straw to gold color. White, frothy head may not be long lasting. Very clear.
Flavor:
Low to moderate levels of grainy-malt flavor, with a crisp, dry, well-attenuated finish. The grain character can be somewhat neutral, or show a light bready-crackery quality or up to moderate corny or malty sweetness. Hop flavor ranges from none to medium levels, and often showing a floral, spicy, or herbal character if detected. Hop bitterness at medium-low to medium level. Balance may vary from slightly malty to slightly bitter, but is relatively close to even. Neutral aftertaste with light malt and sometimes hop flavors. A light amount of DMS is not a fault.
Mouthfeel:
Light to medium body. Moderately high to highly carbonated. Can have a slight carbonic bite on the tongue.
Comments:
International lagers tend to have fewer adjuncts than standard American lagers. They may be all-malt, although strong flavors are still a fault. A broad category of international mass-market lagers ranging from up-scale American lagers to the typical “import” or “green bottle” international beers found in America and many export markets. Often confusingly labeled as a “Pilsner.” Any skunkiness in commercial beers from being light struck in a green bottle is a mishandling fault, not a characteristic of the style.
History:
In the United States, developed as a premium version of the standard American lager, with a similar history. Outside the United States, developed either as an imitation of American style lagers, or as a more accessible (and often drier and less bitter) version of a Pilsner-type beer. Often heavily marketed and exported by large industrial or multi-national breweries.
Characteristic Ingredients:
Two- or six-row barley. May use rice, corn, or sugar as adjuncts, or may be all malt.
Style Comparison:
Generally, more bitter and filling than American lager. Less hoppy and bitter than a German Pils. Less body, malt flavor, and hop character than a Czech Premium Pale Lager. More robust versions can approach a Munich Helles in flavor, although with more of an adjunct quality.

All decoction mashes start with a single infusion step where hot water is added to the mash to start the mashing process. Typical temperatures for the first step vary. Multiple step decoctions are often used. Some examples of steps include:
95F (35C) – Acid and Glucanese rest – to break down gummy solids (glucose) and lower pH of the mash for undermodified malts
127F (52C) – Protein rest

You could use any well-attenuating clean ale yeast. WLP001, or Wyeast 1056 come to mind, or S05 for dry.
Mash at 152.
My beers seem to attenuate really well- so use a lower mash temp if you've have attenuation problems in the past. I got about 82% attenuation with the pacman yeast.
For extract, a full boil would be the same but use 8 pounds light or extra light DME.
For an extract batch with a 2.5 gallon boil, do this:

1. Start with strike water of 10.1L (2.66G) @ 164.33F.
2. Put in 8 lbs of grains.
3. Rest at 152F for 60 mins.
4. Assuming grain absorption of 0.13G/lb, should end up with 1.62G in brew kettle.
5. Prepare for dunk sparge by adding 9.7L (2.55G) to secondary brew kettle. Add grain bag for 15 minutes @ 170F. Squeeze.
6. Begin partial mash out in primary brew kettle for 15 minutes @ 170F.
7. Add sparge water to primary brew kettle. This should result in 4.51G of pre-boil wort.
Took twenty minutes to get to 164F. Didn't drop below 160. 158 after 5 minutes. 155 after 10 minutes. 150 after 50 minutes.
Shit, forgot to add 0.25 lbs of flaked wheats.
Hydrometer is reading 1.04 in water.
Took 25 minutes to boil.
Ended up with 4.6 gallons of pre-boil wort... Hydrometer reads 1.04 @ 118F = 1.048...way below my target OG. If I drop 4 points, its actually 1.044. If 1.044 with 4.7 gallons of PB wort, then efficiency is 75.5%, not bad. Will add 0.75 lbs of corn sugar @ 15 minutes to bump OG.
52 minutes after boil to get to 80F with ice bath.
Now have 1.070 OG with 4.0 gallons of beer! I guess its more like 1.066 based on calibration... That is 77% efficiency!
6 days after pitching, FG is at 1.020 - two gravity points higher than expected. 72% attenuation versus 70%, not so bad. Started to dry hop with 2 oz.
Bottle Carbonation: 2.4 Volumes of C02. 2.9 oz of corn sugar with a cup of boiled water for 3.5 gallons.
First taste on November 13, 2014 - 15 days after bottling. App: completely opaque. Decent head if poured right into clean glass. Aroma: fruity and grassy notes. Taste: Bitter and dry. Fruity. MF: high carbonation. Light-medium body. Overall: really good! even after two weeks in the bottles.
Description: Find the lightness in this deep, dark beer. While it may be completely opaque, reminiscent of a black hole, the aroma and taste will remind you a beautiful nebula, similar to that of an IPA with a dry bitterness coupled with fruity and grassy hoppy notes.
