Notes: Revised recipe based off of my first brew of Atomic Pumpkin.
12 tablespoons (=3lbs pumpkin) of Drybox Jarrahdale Blue Pumpkin Powder at mash.
Added 2 cut habanero peppers in bag at 20 minutes.
Add brown sugar at 15 minutes.
1 tsp Saigon Cinnamon at flame-out.
Add 2 cut habaneros tincture in spiced rum mixed with 1/3 tsp Saigon Cinnamon towards end of ferment. |

-5 gallons @ 126.3 F to reach 120 F, hold for 30 minutes (protein/beta-glucan rest)
-Increase to 153 F and hold for 60 minutes (sacch rest)
Planning to add a yet-to-be-determined quantity of macerated rhubarb to secondary vessel once primary is complete.
8/15/15: It's official, we're bad at wheat beers. To elaborate, we just can't seem to reach our OG or get even a little bit close any time we use more than 30 or 40% wheat in the grist. We'll spare the gory details, but we're gonna want to make a note to dial down efficiency to between 50-65% depending on the percentage and what we're going for. We added some DME to compensate, obviously.
8/29/15: The blowoff assembly on this one stopped bubbling a few days ago. Combined with the krausen fading for the most part, we figured this would end up being just about done. As suspected, it finished at exactly 1.012, and it looks, smells and tastes absolutely awesome from the small hydrometer sample we thieved. This is good because, as one might recall, we sucked really badly at actually brewing this due to poor conversion of wheat using our HERMS system (we got like 45-50% efficiency). We'll eventually figure this out, but we had to toss some DME in to hit target gravity. Anyway, upon tasting this guy, we noticed that the Nelson aroma hopping actually comes through, lending a nice musty white grape funk to the proceedings along with some bright berry notes. We'll probably be adding rhubarb soon, but this one can sit in primary for a little while until we figure out exactly what we're doing. No point racking it to secondary without also adding the rhubarb, really. |

Chill to 100°F.
Pre-acidify wort with food-grade lactic acid to get 4.4-4.7 pH, (5mL).
Add 16 oz. of GoodBelly Juice Drink, Mango
Purge the top of Grainfather with CO2
Leave wort at 95°F for 18 hours or until 3.2-3.5 pH.
Boil for 60 minutes.
Chill to ale pitch temp
Pitch yeast
Let ferment for 7 days before taking gravity readings

Notes: Recipe adjusted for bottling i.e. OG left 5 points below required to allow for extra provided by bottling sugar. Same applies to ABV - adjusted for extra 0.5% at bottling.
Briess Pils malt used but Extra Lite shown in recipe for higher PPG.
Minimash with 0.375kg of LME at 67 degrees for 45 mins. This high mash temp is to get mouthfeel be retaining some of the low temp sugars. Check OG after mash. Mash OG 1 point below.
2 + 1 litre ice and some chilled water required to quick chill wort.
Aerate wort with air stone for 10 minutes. Yeast enzyme in boil.
Overfilled fermenter by 0.5L and missed 1062OG.
Fresh pack of Abbaye Yeast used. Pitched at 16-17c on 30 August. Kept low for 2-3 days and then allowed to increase to 19c and then moved to warmer kitchen after 6-7 days.
Racked to secondary on 9 September.

| Notes: Add 1/2 campden tablet, crushed, to 3 gal distilled water and heat. Add sugars and bring to boil for 60 minutes. Bring 2.25 gal distilled water and 1/2 campden tablet to boil for 15 minutes, just long enough to sterilize. Cool wort and top fermentor off to 5.5 gallons with sterilized water. Pitch and ferment at 70. Add RB extract and priming sugar at bottling. |

Notes: my take on the classic drop top amber ale.
I use the BIAB method, you can use the more tradition method for all grain if you want to. It shouldn't impact the end product.
for partial mash recipe use about 6 lbs DME light in place of 2-row
now what i do for my hop schedule is this;
1. you get your Main wort up to 180 Degrees F. for at least 20 minutes to kill any bacteria.
2. While your main wort is coming up to temp,
get those 2 extra gallons of wort from earlier and use that for your hops schedule. (Less Wort Volume = Shorter boil time.)
3. Make sure to cool the 2 gallons and pitch it first into the 6G carboy
4. Pitch yeast Directly into the 2 gallons Wort when its about 90 Degrees F. and aerate well (I use the Shake method).
5. then add the main wort volume to the now aerated 2 gallons of wort. (Make sure its Properly cooled to 90 Degrees F. as well!)
I've been doing it this way since i started brewing and you should come out with an almost perfectly filled 6 gallon carboy.
Also, I had to develop this method because my stove didn't have enough Btu's to heat 5 gallons of liquid to a boil.

According to the EBCU style guides...
"English pale ale
The earliest mention of the term Pale Ale comes from an English newspaper, in 1704. By the 19th century, Pale Ale was a beer of regular strength (4.5-6.0% ABV) that could appear bottled or on draught. 21st century examples tend to be 4.0-5.0% ABV). Classically, the style showcased English hops in a beer mashed from 100% pale ale malt. Its flavour by repute was clean and assertive, grassy but perfectly balanced, lacking the cruder hop kick of the English version of its fêted sibling, IPA...."
This simple recipe is very similar to "1864 Lovibond XB" described in Ron Patterson's book "The Home Brewer's Guide to Vintage Beer". It's interesting that the recipes for 19th century pale ales collected in Ron's book do still have quite a strong "hop kick". |
