Notes: Based on kit "Flemish Fiend" by Brewferm.
Kit recipe designed for 12 liter output. Target fermenter is a "Mr. Beer" fermenter. Volume of fermenter is approximately 9L at the 2 gallon mark.
Can recipe calls for LME can plus 800g sugar for the 12l. Going to try to scale that back to 9L with the same target 1.010 OG.
Union Jack yeast 6g with kit.
OG calculations aren't even close so I will use ratios for "Dubbel Damme" which made 9 liters and worked well. |

Notes: This beer came out with a nice golden brown color (a little darker than expected but still nice), very clear and a nice head on it. I didn't taste much rye and that's probably because I steeped with crushed Rye instead of flaked. Also, I didn't get the aroma I was shooting for, but the beer had a nice flavor and a nice bitterness without being too strong.
I think for version 2 I will use an extract with rye in it, forget steeping altogether, and dry hop the cascade. |

Notes: Made this with leftover ingredients I had lying around: The last few lbs of a 33 lbs jug of extract, a few oz of several 1 lb bags of grains, and some other extracts that I couldn't remember why I bought. Plus some sugars to dry it out a bit. The hops were a mix of leftovers from bulk orders and partially used packaged. The yeast I recovered from a Belgian triple I had brewing.
