Notes: Double crush grains, add to bag. Strike water temperature of 156/152 for 60 minutes. Increased temperature to 170 for 10 minutes. Drained and squeezed bag. Boil as normal for 60 minutes. Cool it to 55 as quickly as possible. Aeration of wort by splashing into a bucket and then into primary fermentor.
Primary fermentation until it is very quiet. Then transfer to secondary and set the temperature to 35 degrees. Lager it for 4 weeks, then bottle as normal using 2/3 cup of corn sugar in 16 ounces of boiled water.
Condition bottles at room temperature for 2 weeks. |

1Kg Mosaic na DH měním z klasiky na CRYO.
Ohledně úpravy vody mi GPT rozmluvil CaCO3, protože HCO3 dělá tvrdší a drsnější dojem, který pro lehký ejl není vhodný. Naopak klidně prý můžu zvýšil poměr SO4 vůči Cl, ale já zase chci i nějakou plnost, nakonec dávám 300g CaSO4 a 150g CaCl (tím zvednu Ca a poměr SO4/Cl zachovám pořád okolo 2, jako předtím, ale o cca 30% vyšší hodnoty než ve 2024)
2024:
Upravil jsem vyšší výtěžnost a snížil slad, taky dal litry z 1650/1550 na 1600/1500.
500g z 1Kg Mosaicu, co šlo na 5min do varu, jsem změnil na whirlpool.
Plánuju upravit trochu vodu a pH, což asi půjde naproti vytažení hořkosti chuťově, takže snižuju IBU ze 42 na 36
Vystírací voda 3,7l/kg sladu
Vodu upravuji na hodnoty lehkého chmeleného ejlu z jednoho youtube kanálu (cíl: Ca 110, Mg 20, Na 20, Cl 50, SO4 100 HCO3 250). Vařilo se nakonec dřív a nestihlo mi dojít CaCO3, takže musím udělat bez něj (tedy nebude voda tak tvrdá, nižší hodnoty Ca a HCO3), chtěl jsem dávat 200g CaCO3. (Dávám 100g CaSO4, 200g CaCl, 120ml (140g) kyseliny mléčný)
Dle ohlasů tahle verze hodně lidí bavila, takže takhle dobrý.
2023:
Karamelový slad byl dřív Caramunich I, ale už posledně tam šel Carapils, tak i letos necháme Carapils.
Nakonec vyšlo na 11°, dát přístě vyšší výtěžnost, obecně v Panaczechovi alespoň 80%, spíš 81%
2022:
Při 1600l před chmelovarem a 1500l po, vyšlo 11.2°P. Takže trochu naředěno, aby jsme byli na cca 10.8° (Takže efektivita tak 80%)
Vařil spíš David, já dělal věci okolo a zavážel. |
