Notes: Make a mango purée.
Dissolve 1g of Zymex (pectinase+maltodextrin) per kg fruit in a few cl of water. Then add it to the purée and blend a few minutes more. Let rest for minimum 12 hours at 20°C.
Pectinase is not a must but it will increase fruit utilization and the effective amount of beer.
Add mango-puré and lactose to the boil just before flame-out
(Note: if measuring SG before adding puré and lactose, remember to compensate their OG contribution: OG 1,062)
Add dry hops when fermentation is ⅔ finished.
Cold crash @ 0°C 2 days after finished fermentation.
Keg (oxygen-free) after 3 days at 0°C. |

| Notes: Sample Brew-In-A-Bag equipment profile set up for a 15 Gal/50 litre brew pot (diameter of 40cm or 16 inches) using a polyester grain bag to hold the grain. This profile should be used with the BIAB mash profiles available in the BeerSmith mash profiles area. The above assumes loose pellet hops and only clear, chilled wort transferred from the kettle using no trub management techniques. Experienced brewers should adjust 'Loss to Trub and Chiller' and 'Brewhouse Efficiency' accordingly to suit their trub management techniques. |

Sample taken 9/12/14 - gravity 1.022: Dry, slightly tart, pineapple and passionfruit. Probably Brett. Brown rafts atop of a bubbly pellicle.
04/01/15 - Gravity at 1.010 PH at 4.0 Smell of brett, sewer, dirty pipes etc with some barnyard coming through. Brown rafts floating on top of the surface - no bubbly pellicle as before. |
