DIRECTIONS
Mill the grains and mash at 146°F (63°C) for 30 minutes; raise to 162°F (72°C) and rest 15 minutes; then raise to 170°F (77°C) for mash out. Recirculate for 20 minutes or until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to get about 6 gallons (23 liters) of wort, depending on your evaporation rate. Boil for 90 minutes, adding hops, nutrient, and Whirlfloc according to the schedule. After the boil, conduct a whirlpool step: Stir to create a vortex, add the whirlpool hops, and steep 5 minutes. Chill to 66°F (19°C), aerate the wort, and co-pitch the yeasts and Brett blend. For the “open” primary fermentation, don’t use an airlock; loosely cover the fermentor with a sanitized piece of foil. Allow the temperature to rise gradually during fermentation. When fermentation is complete and the gravity has stabilized, crash, package in kegs or champagne bottles, and carbonate to about 3.2 volumes of CO2.
BREWER’S NOTES
Conditioning: We age in foeders for 2–3 months; you could use oak chips or a small barrel. This recipe will work well with any Brett strain(s) you want to use. Condition in bottles for at least 8–12 months.
Water and pH adjustment: We start with reverse-osmosis (RO) water. At the first mash rest, we add phosphoric acid to target a pH of 5.2, plus 1.9 g gypsum and 1.3 g calcium chloride (equivalents for a 5-gallon batch). At the start of the boil, we again add 1.9 g gypsum and 1.3 calcium chloride.
This mixed-culture saison recipe comes courtesy of Bobby Kros, cofounder and head brewer at Kros Strain in La Vista, Nebraska.
Batch 625, he says, is “open-fermented in stainless with our house blend of two different Saccharomyces strains and five different Brettanomyces bruxellensis strains, then aged in an oak foeder. This saison has fruit-forward funk aromas and flavors followed by a dry but soft, finish.”
Here’s what our review panel said about the beer: “Hazy pale yellow with gorgeous, sturdy, meringue-like foam. Complex, enticing aroma with clove-and-chamomile spice, herbal-grassy notes, a touch of horse-blanket funk, and underlying stone fruit. Lively but soft on the palate, with bright stone-fruit flavors and fine, peppery bitterness that dissipates with the sparkle, leaving some cracker, herb-bitterness, and low-level barnyard. Elegant, tasty, and dry. Hits all the right notes.” The beer went on to become one of our Best 20 Beers in 2021. |

Notes: Conditioned grain for a couple of hours and milled night before. Not sure of crush - gap may be too large (let's see).
Sun 10 April 2022 mash in 6:45 am. Capped with carafa at start of mash out, under top plate. Added pack of coopers yeast nutrient to boil.
1 hour boil, from 31 litres to 26.5 litres after cooling. 11 am into fermenter at 24C, 12.5 brix=1.048. 10:00 am made 250ml vitality starter of Diamond. Hydrated 1 pack of w34/70 7:45pm. Out of oxygen. pitched yeast 8pm, 14C. Mon am 10C. Tues pm upped to 10.5, Weds am to 11C. Weds 13th am no sign of fermentation, added extra w34/70 dry. 7 pm signs of Krausen.
Left for Easter weekend at 11C, Monday 4 pm 8.5 brix= 1.023, upped controller to 13C. Tues am 8 brix=1.021, upped tp 13.5C, pm 7.75 brix upped to 15C, Weds am 7 brix=1.014, Weds pm 7 brix. Fri 7:15 am downed ctrller to 10C. Sat into keezer @2C. Packaged Sun 1 May keg plus 6 litres in bottles. A very subtle richness - nice but voyager/crisp munich too light. |

Notes: Well...this started life as a full on NEIPA but then I noticed I was a 3kg bag of base malt missing. This should still be a very tasty brew and one that
is session-able. Will be interesting to see how it turns out.
First attempt at mash-out 75c for extra 20 mins. Grain needs to be at 75c for 10 mins but hard to tell, so will let the wort heat to 72c and then upto 75c for another 10 mins.
NEIPA mix hops are from Cross My Loof Homebrew supplies. Mixture of Mosaic, Citra, Amarillo and Simcoe. 13.9AA.
OG very surprisingly at 1.042...astonishing.
So Mash Out by raising temps after Mashing gained me 10% efficiency. Will have to see if this has had any impact on flavour.
Added High Krausen dry hop...but before fermentation has started (I am going away so have no choice) . We shall see how this goes.
Dry hop addition on Day 10. Gravity at 1.010 so almost there. Raised ferm temps to 18.5, perhaps 19.5 tomorrow. Sample tasted perfect. Nice full mouthfeel, a bite but not too much and very fruity.
Dropped temp back to 18.5c on Day 12 as too near 20c
Day 13 sample 1.008 so bang on. Will test again tomorrow. If no movement bottle.
Day 14. 1.008 bottled 37 500ml bottles. Noticing more trub flow down the bottling wand and into the bottles these last few brews. Will be adding a re-ciculation step to my next brew day.
Also noticed a significant amount of added bitterness in the gravity sample after my last dry hop. It was a large addition but I always considered that at 18c no ibu's would be added. This beer may well end up more of an IPA than an NEIPA if this reflects the final product. |

Notes: OG goal was 1.050, got 1.047.
Pitched yeast at 62-64 degrees. In bath w a ice bottle.
Put in yeast at 10 pm. Bubbling by morning.
Started w 8 g of wort. Ended w exactly 5 g.
Made on 2nd thursday of march. Spring break.
Update: 4/20 first tasting. Yummmy! Still green i think. Hazy, orangey
Update 5/27. It continued to get better and better. Was a little too sweet for my liking. Coriander and orange took a while to mellow. Next time i want to add a touch more hops, maybe some pepper, and flour for cloudiness. As it is we drank the keg in no time. |
