Boil 90 mins. Then whirlpool 30 mins.
Cool to 48 to pitch yeast. Ferment at 54 until gravity is 1020, then raise to 59 until fermentation is complete.
Lager 3-4 weeks. Carb to 2.6 vol.
For water, adjust with gypsum and chalk in the mash. Also calcium chloride in mash and boil. Profile is 52.3 Ca, 1.5 Mg, 10.9 Na, 45.6 sulfate, 57.8 bicarb,

Dumped wort on top of Citra. Whoopsied, as temp was around 41.5 deg C. Voss prob loves that shit though..
It's going nuts - about 1-2 hours later.
Piffed 80gm Sabro in when was slowing down a bit ( 24hrs ).

Notes: 1lb per gallon is suggested. Probably won't have that much but we'll see.
Freeze. Put in a sanitized blender with some sterile water to make a puree. or you can make puree and heat it to sanitize. (add and candi sugar to this?) Rack into secondary and add puree. Perhaps filter the puree first to get some of the seeds out?
Sit for a week. After secondary, cold crash for 24 hours. Put cheese cloth over keg to catch seeds. |

Notes: cal strain took beer to 3 plato =1.012 SG, perfect fermentation! comming in at a nice 5.66% alcohol with 76% attenuation.
english ale went to 4.2 plato = ~1.016, great fermentation as well! A slightly less attenuative yeast comming in at a cool 5.25% alcohol 70% attenuation
Added hops 6 min into a 10 min whirlpool. did not laughter slow enough, and i collected 30L of 1.04 wort, i wanted to boil it down to 1.060 in 20 L but i left the lid on for 30 min while i went to walk muppet and jacked that idea up. anyway , i hope it is not watery.
kegged red ale # 2 on 12/11/16 and FG is 3.3 P, better attenuation than expected, final ABV is 5.49 |
