Crushed fresh apple goes into a muslinbag.
Ferment at about 65 °F (18 °C). Once fermentation is near completion after two weeks, raise the temperature to 70 °F (21 °C) to perform a diacetyl rest for two days. Then cool the beer about 6 °F (3 °C) per day for four days to help clear the beer. Rack the beer into a keg and force carbonate to 2.5 volumes (or prime and bottle condition). If bottle conditioning, leave the beer at 70–75 °F (21–24 °C) for a week or two. Lager at 35 °F (2 °C) for two weeks to a month. Serve at 40–45 °F (4–7 °C). |

After primary fermentation winds down, add 3 (14.5oz) cans of Oregon brand tart red cherries in water (drained).
If using fresh or frozen cherries, pit and then pasteurized via sous vide @ 140F for 20 minutes.

Filled Kettle with 8 gallon of water and added water additions
Took out about 3-4 gallons for sparge and put excess on stove top
Used Anvil pump and mixed mash twice throughout mash
Mashed for 60 minutes @ 154 degrees
Pre boil gravity:1.056
Sparged with 180 degree water until I reached 6.5 gallons
Started boil
Turned off heat after roughly 70 minutes @ 5.5 gallons
Did 20 minute hop stand w/ 4 ounces of hops
Chilled down to 70 degrees
Pitched Wyeast London Ale III @
FG: 1.020
Transfered to Keg on July 10th
Let sit for 24 hours in Keezer
Force Carbed 24 hours later

| Notes: I didn't think that I had enough rye in this one but I can say that it got 3rd place out of 22 other entries in a competition. At 6 months I aged some bottles in the fridge and left some in a closet and the ones in the fridge were very good and the other were overly bitter but still drinkable. I will make this one again, maybe as a all grain. |

167 strike temp worked well to get me just above 155
I let the water cool off too much before the whirlpool. Should have added at 180. Next time don't run the wort chiller after flame out.
