Notes: Mash in at a strike temperature of 130 °F (54 °C). Rest for 30 minutes then raise the mash to conversion temperature at 154 °F (68 °C). Hold for one hour and sparge at 172 °F (78 °C).
Collect wort until the specific gravity falls below 1.008 or pH exceeds 5.8. Add water so you have a little over 6 gallons (23 L) (I want 7 gallons) of wort before the boil.
Boil the wort for two hours, adding hops at 120, 60 and 30 minutes remaining in the boil. After the boil, cool the wort with a wort chiller and aerate well.
Pitch the yeast at 65 °F (18 °C), but drop the temperature over the course of one week to 55 °F (13 °C). Hold at 55 °F (13 °C) until fermentation is complete — about two weeks. Rack and lager at 35 °F (1.6 °C). Lager for a minimum of one month, preferably longer.
This is version 2.0, I increased German Pilsner to 8.25 from 7.5m lbs Munich to 4.4 from 4.0 and Smoke to 1.5 from 1 and increase 60 minute hops to .50 from .25, looking to get more beer into fermentation increased OG from 1.066 to 1.073 |

Notes: Two stages of hopstand/whirlpool - first at flameout for some bitterness/isomerization (half an hour), followed by a lower temp (85C) hopstand for an additional half hour (this is in the sub-isomerization range), and is attempting to strike a balance between more rapid extraction of hop oils and the volatilization rate.
Mash done in 18L of water (strike temp 74C to hit 67C mash temp), BIAB, with 14L of sparge water (single sparge).

Notes: Mashed for 60 min (difficult on the stove to maintain temp) approx 155 deg was my goal. Started with 1 qt water for 1 lb total grain. added quite a bit to cool temp down since the 10 deg rule over ideal temp wasn't getting me down quick enough.
Mash out at 170 deg for 10 min (includes raising temp time). Sparged with 170 deg water and added water to get about 2.75 gal of wort. Brought to boil (about 45 minutes). Added DME just before boil and brought up to boil. Added hops as scheduled. Opted to add Willamette at the last minute to give more complex bitterness. Added the candy with 10 minutes to go. OG was 1.080 (adjusted the final batch size), as expected. Pitched the yeast a little high but was having trouble getting to low-60s (66). COncern with the yeast was that in transport my car got pretty warm and don't know if it will work. NO movement after 30 hours. Bubbled fine and transferred after 9 days. FG was closer to 1.016. Tasted sweet with some complexity. Not hoppy at all. Turned out fantastic. The longer I wait the better it gets. |

Notes: Brew day 5th Apr 23 water treated with AMS,
an attempt to brew a low alcohol beer. Google advice suggests high mash temp and short mash time , presumably to leave unfermentable sugars ? to add body? aimed for 72c and 40min
Bottled 10 Apr, taste is ok but obviously short on mouth feel.
I was looking to get an ABV of about 2% but ended at 1%
Bottle conditioned with table sugar aiming for 2.5 will update in a couple of weeks
03 June, it turned out drinkable which is a relief. Not a lot of flavour, a weak English bitter would be the best description but I think it has promise, will try again either a higher ABV 1.5-2% and or dry hop.
Other option is to add some lactose to give it body, |
